You have a lot of answers already, but I PROMISE you, this is the BEST macaroni salad recipe EVER!! Every single time I make it, I get asked for the recipe. Just yesterday I doubled the recipe and made it for a potluck dinner, there was NONE left and 3 people asked for the recipe. I started taking recipe cards with me to pass out :-)

You will NOT be disappointed. Oh yeah, It's really easy to make too.
Stacy's Macaroni Salad ( Stacy is my sister)

2 cups uncooked macaroni
1 cup mayonnaise ( I use Hellman's)
1 tablespoon mustard
scant 1/4 cup vinegar
5 ounces evaporated milk or 2/3 cup regular milk - only one of these, not both
1/2 cup of sugar
salt, pepper, parsley to taste
4 hard boiled eggs, diced
1/2 a large onion, diced

Cook the macaroni according to the package
drain, rinse in cold water, drain again
add all ingredients and stir well

If I make it the day ahead, sometimes I need to add a little bit of milk when I am going to serve it to make it creamy again as the noodles soak up a lot of the milk overnight.

My husband doesn't usually like Mac salad, but he eats this by the bowl full - LOL

Blessings,
Mom of 5 with another on the way

That's a pretty vague question. There are tons of types of macaroni salad. When I think of macaroni salad I think of tuna mac.

1 box of elbows
2 cans of white tuna in water
3 large eggs
1 large onion
1/2 pepper
All of the rest is to taste:
salt (I generally use about 2 tbsp. of Goya season salt)
pepper
relish ((I generally use about 3 tbsp.)
mustard (I generally about 2 tbsp.)
mayo (I generally use about 1 1/2 cups. DON'T use Miraclewhip!!!!!!!!!!!!!!!)

I tend to make this when I am in a rush, so this is my prep. I start the eggs in the pot with cold water. Once the water has come to a boil I let the eggs cook for about 4 minutes. Once I remove the eggs I begin cooking the macaroni. Make sure that you salt the water generously before adding the pasta. While everything is cooking I dice the pepper and onion and mix it with the other ingredients until it becomes a a VERY runny tuna salad. By then the eggs are generally cool enough to peel and dice. I add this to the tuna mixture. I pop this in the fridge. When the macaroni is finished cooking strain it and let it cool in the the fridge for about 20 minutes. Then mix it all together in a big bowl. The pasta will still be warm, but this allows the pasta to absorb some of the flavors of the tuna mixture. The key is to taste the salad before you put it in the fridge to fully cool. Then add more of the ingredients you think you need. Remember that once it is cool you will probably need to add about 1/4 cup more mayo to make it creamy before you serve it. I also really like to add a small can of sliced olives to mine, but it is not traditional.
