Most people cook fillet minone with a strip of bacon wrapped around the outer edge and secured with a pick. That's because the fillet is very lean and it needs the bacon to help keep it moist. It's best to broil it. Use a broiling pan (shallow pan with a slotted top) and move the oven rack to the top. Pre-heat the broiler for a few minutes. Season the steak (I use Grill Mates Montreal steak seasoning - it taste just like a steak house steak!) put the steak on the broiling pan and place on top rack under broiler. DO NOT CLOSE THE DOOR. Let the door stay ajar. Keep a close eye on it and turn after a few minutes.
