Potato Pancake:
15 min 5 min prep
4 servings
2 1/2 lbs grated potatoes
2 eggs
1 1/4 cups flour
1 teaspoon garlic salt
1 teaspoon onion salt
1/2 teaspoon black pepper
4 tablespoons oil
1. In a medium mixing bowl, add all ingredients except oil, and mix together.
2. Heat oil over medium high heat in a large frying pan.
3. Drop about 1/2 cup (or desired size) of potato mix into pan, and flatten with a spatula.
4. Allow to cook about 5 minutes on each side, or until golden brown.
5. **Add more flour for thicker batter, or add milk as desired for thinner batter.

POTATO PANCAKES (the french way) :
Shred some potatoes, not too thin, not too thick.
Add to battered eggs (there must be more potatoes than eggs), with crushed garlic.
In pan, put butter and make the pancakes.

I don't have a "specific" recipe, but this is how I make them.
4 - 5 med peeled potatoes
1 - 2 med onions
1 - 2 eggs
flour to thicken
salt and pepper to taste
either grate or use a food processor for the potato and onion
add egg and enough flour to thicken
pan fry in butter

GERMAN FRIED POTATO PANCAKES
5 lbs. potatoes
2 lg. sweet onions
2 lg. eggs
1/2 c. self-rising flour
Salt & pepper to taste
Grate potatoes and onions together. Pour off excess juice, mix in eggs then add enough flour to thicken. Salt and pepper to taste. In large iron skillet, heat cooking oil; drop mixture into hot oil (about 2 inches pancakes). Brown to crisp on both sides. Serve hot.

This one's delish:
POTATO PANCAKES (Latkes)
4 med. potatoes
1 sm. onion
1/2 c. pancake mix
1/2 c. oil
1 tsp. salt
2 tbsp. sour cream
2 eggs
1/2 tsp. pepper
Peel potatoes and grate into a bowl. Pour off extra liquid. Peel onion and grate into potatoes. Add eggs, pancake mix, sour cream, salt and pepper. Mix well.
Heat oil until it sizzles. Drop a tbsp. at a time of batter into hot oil. Flatten with a pancake turner. When bottoms are brown turn them over. When done remove and drain on paper towel lined plate. Serve with applesauce, sour cream or just plain.
