Has anyone ever made the buckeyes made out of peanut butter and chocolate? Im making them this weekend and I heard they are kind of a pain to do. Any help on making these as smoothly as possible would be greatly appreciated!

Thanks!

I have made them several times and have had trouble a few times, but they are worth it.

I'm not sure what your recipe is, but here are a few tips:
1) Make sure you are using butter flavored shortening - it makes a big difference in the flavor.
2) Use a toothpick to dip them in the chocolate.
3) Cooling them in the fridge is much quicker.

Good luck!

Hang on I have to go get the recipe out of my book! My recipe is simply called Peanut Butter Balls. Cream together 3/4 cup peanut butter, 1/4 butter softened, 1 cup icing sugar. Add 2 cups Rice Krispies, 1 cup coconut, 1/2 cup chopped walnuts. Take a teaspoon of dough and roll it into a ball. Butter your fingers. In a saucepan melt 1 package of chocolate chips ( use chipits.. they melt) and 2 tablespoons of parowax ( parowax keeps the chocolate from hardening while working with it.) Use a tablespoon to put the balls on and dip in the chocolate mixture to coat the outside of the balls. Place chocolate dipped balls onto a tray covered with a piece of wax paper. I make these every Christmas and have since I have been a teenager. They are my absolute favourite. ENJOY!!!! Keep them refrigerated or frozen.

Here is a recipe. One trick, is to freeze the balls before you dip them. It makes things easier.
Buckeye Candy

18 ounces smooth peanut butter
1 tablespoon vanilla
1 cup butter
1 1/2 lbs powdered sugar
chocolate almond bark, for dipping
In a saucepan, melt one cup butter.
Add peanut butter and vanilla.
Remove from heat and gradually add powdered sugar.
Mixture will need to be worked by hand after adding the last 8 oz of powdered sugar.
Re-warm mixture in microwave if needed to incorporate all of the sugar.
Roll into little balls, about 1”.
In top of double boiler, melt almond bark.
Dip each peanut better ball ¾ of the way into the chocolate mixture. (A toothpick helps here!)
Place dipped candy on waxed paper until cool.

My mother-in-law makes them quite often so they cannot be too difficult. :-)

I don't have her recipe, but this one looks good to me:

Ingredients:

* 2 cups creamy peanut butter, (not all-natural)
* 1/4 cup (1/2 stick) butter or margarine, softened
* 3 3/4 cups (16-oz. box) powdered sugar
* 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
* 2 tablespoons vegetable shortening

Directions:
LINE baking sheets with wax paper.

BEAT peanut butter and butter in large mixer bowl until creamy. Beat in powdered sugar until mixture holds together and is moistened. Shape into 1-inch balls; place on prepared baking sheets. Freeze for 1 hour.

MELT morsels and shortening in medium, uncovered, microwave-safe bowl on HIGH (100%) power for 1 minute; STIR. Morsels may retain some of their shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted.

DIP peanut butter centers into melted chocolate using a toothpick, leaving a small portion of the center uncovered. Shake off excess chocolate and scrape bottom of candy on side of bowl. Return to baking sheets; refrigerate until chocolate is set. Store in covered container in refrigerator.
