MY CHICKEN

INGREDIENTS
4 skinless, boneless chicken breast halves
4 ounces Dijon mustard
1/4 cup teriyaki sauce
1/4 cup bacon bits
1/2 cup grated Parmesan cheese
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
Place chicken in a 9x13 inch baking dish. Slather mustard evenly over chicken, then pour teriyaki sauce evenly over all. Sprinkle with bacon bits, then cover with cheese.
Bake at 400 degrees F (200 degrees C) for 30 minutes.

Me and my wife call it Frito Bandito. Some people call it other things. Brown some ground beef and add taco seasoning. Pour the beef over a layer of Frito chips in an oven safe dish, sprinkle a generous layer of cheese on top, and stick it in the oven until the cheese is melted good and everything is heated up. Takes about 10 minutes. You can top it with the normal taco condiments, sour cream, tomatoes, onions, guacamole, whatever. I'm estimating total time takes about 15 to 20 minutes. They'll be astounded that they are eating Fritos. Be sure to cook enough beef. More is better than not enough. If you don't cook enough it'll be like the kids are just eating nachos out of the oven rather than a "casserole", which is kind of is.

Kraftfoods.com is great for quick kid-friendly meals. Here's an easy one that my mom used to make for us:

Barbecue Beef Filled Biscuits
Prep Time: 10 min
Total Time: 24 min
Makes: 4 servings, 2 filled biscuits each

1/2 lb. extra-lean ground beef
1 medium green pepper, finely chopped
1 medium carrot, shredded
1/3 cup BULL'S-EYE Original Barbecue Sauce
1 can (7.5 oz.) refrigerated buttermilk biscuits
1/2 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese

BROWN meat in medium skillet; drain. Add green pepper; cook and stir 5 minutes or until peppers are crisp-tender. Remove from heat. Add carrots and barbecue sauce; mix well.
SEPARATE biscuits. Press 1 biscuit onto bottom and up side of each of 8 medium muffin cups sprayed with cooking spray. (See Note below for what to do with remaining 2 refrigerated biscuits.)
SPOON meat-vegetable mixture evenly into biscuit cups, pressing filling into cups with back of spoon. (Filling will be mounded.)
BAKE at 375°F for 10 minutes. Sprinkle with cheese. Continue baking 3 to 4 minutes or until biscuits are golden brown and cheese is melted.

Sheppards Pie

1 1/2 lb ground beef
1 can cream of mushroom soup
1 can green beans drained
2 packages instant mashed potatoes or tater tots

Brown ground beef and drain add the soup and green beans mix and put into cassarole dish and top with mashed potatoes or tater tots bake at 350 for about 30-45 min.

Bubble Pizza

2 tubes biscuits, cut into quarters
2 cups cheddar cheese, shredded
2 cups moz cheese, shredded
1 lb hamburger, browned
1 jar pizza sauce

Place cubbed biscuits in a 9x13 baking pan. Stir in browned hamburger, 1/2 of the cheese and pizza sauce. Sprinkle remaining cheese on top. Bake according to directions on tube of biscuits (until biscuits are done).

Can add in other toppings too: olives, mushrooms, etc.

Tacos! Buy the tortillas or pkg of taco shells. Brown/drain ground beef and simmer with chili powder, cumin, garlic, & salt/pepper or pkg of taco seasoning and a little beef broth/ water until evaporated. Then put out the cheese, lettuce, sour cream, diced tomatos, green bell pepper, onions and salsa. Let them fix their own... and they can clean up for you later too! :)

Here's is my daughter's favorite - they call it Chicken, rice and corn. Its actually hamburger, but they still call it chicken.

Ground beef - cook up your ground beef and add your favorite seasonings to it. Drain the fat and add a can of corn kernels - leave on low heat until corn is warm. Add this mixture to 4 cups of cooked white rice. So easy and the kids love it.

Don't all kids like McDonalds? Personally I never eat the stuff but I hear that's what parents feed their kids these days.
