Assuming it's a girl, you'll go a long way if you address her as 'ciccina.'

darling is in Italian as an adjective caro(male) cara (female), diletto/a, amato/a, carino/a, delizioso/a
as a noun it means prediletto, beniamino,tesoro,angelo.
he is the darling of the family / è il beniamino della famiglia
your baby is a darling / il tuo bambino è un angelo
I'll think about it,darling / non ti preoccupare, tesoro, ci penserò io.

If you're addressing someone as "darling", the proper translation would be "tesoro", or you could always go with the generic "amore", which practically says the same thing.
