2 - ripe avocados out of their skins
1 cup small diced tomato
1/2 cup small diced onion
1 or 2 small diced jalapenos depending on spice desired
1 teaspoon lemon juice
Salt and pepper to taste
Place ingredients in a medium bowl and mash together with a fork.
This is the freshest, nicest guacamole that I've ever had. Don't put it in a blender or food processor, just by stirring it all together the avocados will break up and you'll have wonderful chunky guacamole that you make in minutes any time you want.
It's really good with chips and a margarita! :-)

This is Nigella Lawson's recipe and is the best guac recipe I've ever made.

Ingredients
3 ripe avocados
scant teaspoon salt
3 to 4 limes, juiced, to taste
4 tablespoons fresh coriander, chopped
1/2 fresh green chili, or to taste, minced
4 scallions (white and green parts), finely sliced

Method
Get everything, except the avocados, prepped when you get home. Just before you want to eat, peel and stone the avocados and put the flesh in a bowl. Don't worry about how pulpy you make the avocado, as it will be mashed. Dissolve the salt in the lime juice and pour it over. Then add the other ingredients and mash with a fork until you have a rough lumpy mixture. At all costs avoid turning it into a smooth puree; by its nature the avocado will be smooth anyway, but you want as many soft but form-holding clumps as possible.

3 Large soft dark Avacado's
2 Medium or large Tomatoes
One medium white onion
1 Lime - It keeps it green and fresh
One bunch of Cilantro
One Jalapeno pepper
3 fresh cloves of garlic
Salt
Pepper

Chop tomatoes onion and jalapeno peppers into small pieces. Cut Avacado's in half discard the seed and using a spoon scoop out the green. Take garlic cloves and mash them under a spoon. Take some salt and pour it over the crushed garlic, this will bring out the garlic flavor. Add the garlic, tomatoes onion and jalapeno to bowl. Tear off only the cilantro leaves and chop until fine(we use about 30 leaves because it tastes good), add that to the bowl. Cut lime in half and remove seeds, squeeze as much juice as you can into the mix. Stir and mash until you have what looks like Guacamole.

If you like it spicy you can add a Habenero instead of a Jalapeno - or just use two Jalapeno's

This is yummy stuff and we always make a lot of it on Superbowl Sunday.

Guacamole:

10 min 10 min prep
2 servings

1 large avocado, scooped out of shell and mashed
2 tablespoons sour cream
1 tablespoon salsa
1 garlic clove, pressed
1 tablespoon sweet onions, finely diced
1 teaspoon cilantro or parsley (note, some people find it vile)
1 tablespoon tomatoes, finely diced
2 teaspoons black olives, minced
1 teaspoon fresh lemon juice or lime juice or balsamic vinegar
salt, use less if you'll refrigerate (you shouldn't need much)

1. Cut the avocado in half, scoop out the flesh with a spoon; mash 3/4 of it well and chop the remaining 1/4 coarsely (I do this with the spoon, in the avocado shell, before scooping the last bit out).
2. Mix it into the mashed portion.
3. Mix all remaining ingredients together.
4. Serve immediately, or cover with plastic wrap, pressing wrap firmly to surface of guacamole (or it will turn color due to oxidation) and refrigerate up to 4 hours before serving.

This is a very simple one that I use. It is not exact ingredients since I do things by taste. Ripe mashed avocado es, chopped green onion, cilantro, a little ranch dressing, Pace Chunky salsa (either medium or hot) seasoning salt, garlic powder and coarse ground black pepper. Mix it all together and refrigerate in a tightly covered container. I always end up making it for my daughter's family get to togethers and mine is always the first to be eaten with no complaints.

4 ripe avocados, peeled, seeded
1 tsp ground cumin
1 ripe, medium Roma tomato, seeded, diced
½ Cup minced sweet white onion
2 serrano chilies, seeded, minced
¼ Cup chopped cilantro leaves
4 Tbsp fresh lime juice
Hot pepper sauce, sea salt, white pepper to taste

Instructions

Cut avocado in large chunks and mash coarsely in large bowl with a fork. Add remaining ingredients and blend gently - leaving some small chunks is fine. Taste and adjust seasoning with more pepper sauce, salt and pepper if desired.
