Breakfast Casserole
INGREDIENTS
12 slices bacon
1/4 cup butter, melted
3 cups croutons
2 cups grated Cheddar cheese
6 eggs
1 3/4 cups milk
1 bell pepper (any color), diced
1 tablespoon prepared mustard
salt and pepper to taste
DIRECTIONS
Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
Preheat oven to 325 degrees F (165 degrees C).
Melt butter in the microwave, or in a small pan on the stove over low heat. Spray a 9x12 inch baking dish with vegetable spray. Place croutons in the bottom of the dish, and drizzle with melted butter. Sprinkle with grated Cheddar cheese.
Crack the eggs into a bowl, whisking to break up the yolks. Add milk, peppers, mustard, salt, and pepper, and beat until well-combined. Pour over the croutons and cheese, and sprinkle with crumbled bacon.
Bake in the preheated oven for 40 minutes. Remove from oven and allow to stand 10 minutes before serving.
**I also added some cooked sausage and diced ham and it turned out wonderful.**
Or just make eggs, bacon, sausage and toast; pancakes and sausage. serve with some fresh fruit and orange juice.

Ok guys usually like their food. Im Irish what we would serve would be orange juice, then cereal, followed by a traditional Irish fry up! Actually I personally do not fry evverything, so I will tell you what...
Grill sausages, bacon, halved tomatoes.
Fry some mushrooms if you want them, black and or white pudding if you can get them...not the end of the world if you cant. We eat them over here and they are tasty.
Also you can fry potato cakes I will give you the recipe beloe, or if not that use hash browns.
Also fry your eggs.
Serve with lots of coffee, followed by
toast and marmalade.
Delicious!
Potato cakes (y ou can make in advance and reheat later)
500 ml/2 cups of freshly mashed potatoes
40 ml/2 tablespoons melted butter
80ml/4 tablespoons flour
salt
Method:
Mash the potato well, add in the butter and then work in the flour.
Salt to taste. Roll out on a floured surface and cut into 3 inch circles.
Fry on a hot pan till golden, about 3 minutes on each side.
Eat as part of a fried meal, with egg and bacon,
or nice for tea with just the butter, or also with strawberry jam!!
You can also make them with a little chopped onion in the mixture.
Other ideas would be Irish pancakes...rather than American...
500g/1 lb flour
90g/3oz sugar
1 tsp. baking powder
1/2 tsp.salt
2 eggs
450ml/ 15 fl oz/ 3/4 pt. buttermilk
Method:
Mix all dry ingredients together. Beat the eggs and add the buttermilk.
Mix well into the dry ingredients.
Cook tablespoons on a hot griddle or frying pan.
Turn over when the underside is cooked and cook second side.
Serve warm with sugar and lemonjuice, golden syrup or butter and jam.
Or you could do the healthy option, such as fresh strawberries or other exotic fruit, followed by something like crumpets, or scones (In USA you call them biscuits I think.) serve them with butter and jam of your choice!

Try the following
Eggs Benedict
1 quantity Hollandaise Sauce (see link at end of recipe)
6 large, very fresh eggs
12 slices pancetta, grilled until crisp
3 English muffins, split in half horizontally
a little butter
Pre-heat the grill to its highest setting.
Make the Hollandaise Sauce. Poach the eggs (see How to poach an egg, below). When the pancetta is cooked, keep it on a warm plate while you lightly toast the split muffins on both sides. Now butter the muffins and place them on the baking tray, then top each half with two slices of pancetta. Put a poached egg on top of each muffin half and then spoon over the hollandaise, covering the egg (there should be a little over 1 tablespoon of sauce for each egg).
Now flash the Eggs Benedict under the grill for just 25-30 seconds, as close to the heat as possible, but don't take your eyes off them – they need to be tinged golden and no more. This should just glaze the surface of the hollandaise. Serve straight away on hot plates.
Or Smoked Salmon Pink 'Uns
5 plain bagels
2 rounded teaspoons sesame seeds
For the spread:
4½ oz (125 g) smoked salmon (trimmings are fine)
9 oz (250 g) quark (reserve 1 rounded tablespoon)
2 tablespoons lemon juice
1/8 level teaspoon cayenne pepper
salt and freshly milled black pepper
To garnish:
cayenne pepper
mustard and cress
Preheat the grill to its highest setting. Simply place all the ingredients for the spread into the goblet of a food processor or liquidiser and whiz to a rough purée. Taste and season with salt and pepper and that's it. When you are ready to serve, split the bagels in half horizontally and toast the outer side of each half. Then turn them over and spread the reserved quark thinly on to each one, sprinkle the sesame seeds on top then toast until golden brown. Finally, spread the purée generously on top of each one and serve, sprinkled with a little extra cayenne and garnished with mustard and cress in the middle.
Or Canadian Buttermilk Pancakes with Maple Syrup
4 fl oz (120 ml) buttermilk
5 oz (150 g) plain flour
½ level teaspoon baking powder
pinch of salt
3 large eggs, beaten
about 1-2 oz (25-50 g) lard
To serve:
lots of pure maple syrup and crème fraîche
First sieve the flour, baking powder and salt together in a roomy bowl and make a well in the centre. After that, whisk the buttermilk and 3 fl oz (75 ml) cold water together in a jug and gradually whisk this into the bowl, slowly incorporating the flour with each new addition of liquid. Finally, add the eggs a little at a time until you have a smooth batter.
Now place a large, solid frying pan over a medium heat, add 2 teaspoons of the lard and heat it until the fat shimmers. Then, using a tablespoon of batter per pancake, place 2 or 3 spoonfuls into the pan.
They will take about 1 minute to turn golden brown, then turn them over using a spatula and fork, being careful not to splash yourself with the hot fat. Give them another 45 seconds on the other side, by which time they should have puffed up like little soufflés, then briefly rest them on some kitchen paper to absorb any excess fat.
Repeat this with the rest of the batter, adding a little more lard if necessary. They will keep warm in a low oven, but to enjoy them at their best, have everyone seated to eat them as soon as they come out of the pan.
