Ha ha, Brian, you're killing me! The D80 is a better camera, I'll grant you that. But it's also $415 more than the XT and $245 more than the XTi.
Thomas, I get the feeling that you're on a pretty tight budget - i.e. you have other things to spend your cash on, too. In these cases, the golden rule is to economize on the body and spend on the lens. The lens determines your image quality. In effect, the camera body is just along for the ride.
The XT is (still) a very capable machine. The XTi adds a few things that DO justify the extra price, but these are all things that you can probably manage without. The most important changes are that the XTi adds 2 megapixels, a bigger screen, and it has a slightly better AF system.

The XTi is recommended if you still have enough budget for a decent lens, but otherwise get the XT.
(The 18-55mm kit lens isn't a terribly good item... but it will do as a start.)

XT is better than the XTI. XTI has more problems of underexposing. Also the extramgapixels are on the same sensor size of both ie, smaller pixels on XTI making it more prone to noise/grains. XT is a proven camera and for that price it is a steal, it picture quality is extremely close to a 20D/30D.

I advise you to get Nikon D80. It has Spot metering, double exposure capability Cannon does not.
