Personally, I just slice the cucumbers and load up the sandwich with other tasty veggies!
Try this:
use pita bread...cut it in half...put hummus on either side for your 'dressing'...add onions, tomatoes, romaine lettuce and the cucumbers. If you like cheese, add a light cheese as well such as provolone, or muenster. If you want a kick, add pepper jack. It's delicious!

Try sprinkling the cucumber with dill and some Greek yogurt or quark, plus a little salt. Put this on your buttered bread. It tastes wonderful!

Plain old salt and pepper will do ... although my mother used to make very tasty cucumber sandwiches by letting the cucumber soak in vinegar first. (Butter is essential also, sorry to state the obvious).

you can experiment with all different things but if you just want a cucumber sandwich it's just bread, butter, cucumbers and salt and pepper

I just put miracle whip on the bread, then the cukes and some salt and pepper! A little butter on the bread is good too.

you can make tea sandwiches using thinly sliced cuqs, cream cheeses(flavored if you prefer with herbs such as parsley, chives and dill or Philly makes smoked salmon)
Spread cream cheese on your choice of bread, I like pumpernickle, top with cuqs and alfalfa sprouts and another piece of bread, refrigerate til filling is cold, using a sharp knife trim crusts of bread and slice diagonally twice or you can use a cookie cutter .

That's pretty much up to your own tastes. The ones I've had usually had a bit of cream cheese with them. Experiment and find what works for you. Enjoy:)
