Tips for soft, chewy cookies:

The secret to soft cookie is to take them out of the oven before they are done all of the way. Let them sit on the cookie sheet about a minute before you remove them or they will fall apart. Then I cool them on wax paper instead of a cooling rack to help hold in the moisture. Store them in an airtight container as soon as they cool.

This works every time. Don't bake cookies the full time and then cool on wax paper instead of cookie rack and then store them in a airtight container but tape a damp paper towel to the top of the container.

Depending on what kind, adding apple or carrot can help to keep them moist. Also making larger cookies and baking at lower temperatures can help too.
