In the supermarket, they keep the eggs are on the shelf at room temperature, yet in my fridge I have an egg holder which suggests that I should keep the eggs in the fridge. Where should I store my eggs?

i manage supermarkets for a living so I feel I can speak from some position of authority. With most supermarkets there is an ambient cold in the surrounding area from open refrigerators that keeps the air colder than room temperature where eggs are concerned. If eggs are not on sale we DEFINITLEY keep them in a dairy cooler. Its not healthy to keep eggs at room temperature for weeks upon end, and the best idea and safest is to keep them in the fridge. when in doubt why risk your health?

The most familiar egg package is the pulp or foam carton holding 12 eggs. There are sizes other than dozens available in some regions such as 2-1/2 or 3 dozen small eggs per package or packs of 6, 8 or 18. The sponginess of the carton insulates the eggs from jolts. New package designs are constantly heing tested to provide the best protection for the eggs. Whether foam or pulp, the carton prevents loss of moisture and carbon dioxide and also keeps the eggs from picking up undesirable odors and flavors. Even though your refrigerator may have an egg shelf in the door, it is better to store eggs in the carton on an inside shelf for freshness' sake.

It depends what country you are in. Fresh eggs have a natural thin membrane over the shell that prevents bacteria from entering the eggs and making them go bad quicker. In the United States, eggs are required to be washed and disinfected before being sold and this destroys the membrane. Therefore they should always be refrigerated. In most European countries eggs are not washed, just lightly cleaned before going to market. Those eggs can be stored at room temperature for a few weeks without going bad.

But regardless, storing in the refrigerator wont hurt . So if you have room, I would say to put the carton in the fridge.

Eggs should be stored in cool places.

Most supermarkets are air-conditioned. Unless your residence is air-con throughout, the only place to store should be the fridge then.

You can try to place an egg in room temperature and one in the fridge. Both should have the same expiry date. You will notice the one in the fridge last longer.

However, certain food should only use room temperature eggs. Like meringue.

The egg has quite an interesting life of its own... I prefer them not to keep them in the fridge, but if I make mayonaise I have to, of course, otherwise tak jadi... but let's face it: the chicken that lay the eggs, do they keep them in a fridge? No... fresh eggs stay longer 'fresh' in your egg holder in your fridge, but nothing really happens to them if you keep them at room temperatures. If the chicken has been fertilised the eggs eventually will start developing, but what you buy in a supermarket is from 'virgin hens', they don't see any rooster and thus the egg will stay 'fresh' quite some time. Hey, I live in Borneo, what do you think room temperatures are here... no problem whatsoever! Plus, let me tell you that (I studied food technology in Switzerland): in Europe a 'fresh egg' can be up to THREE weeks old! 'Farm Eggs' are eggs that are not older than one week. "Normal" eggs (without any 'fresh' or 'farm') can be one month and older in the shelves of your super market!

This is interesting to me.

I live in Australia and in the past we have always kept our eggs in the pantry.
When I travelled to the USA, went to the supermarket and searched to find the eggs on the shelves I was really amazed to see them refridgerated. My USA companion told me that it was dangerous not to keep them cold.

So, now back in Aus I have noticed that the eggs in stores are still on the shelf (with about 10% in the fridge).

I still keep my eggs on the shelf in my pantry.
Sometimes I think we just go too far with beig overly cautious.
Then again if we saw just how repulsive/unhygeinic the conditions of battery chicken farms are we probably wouldn't eat the eggs at all.

You must live in a different country than I do...I've never seen eggs in the market sold from a shelf...they always have them under refrigeration. But to answer your question, eggs of themselves will be good kept on the shelf for two weeks, however, the bacteria (salmonella), will grow rapidly at warm temperatures. I put my eggs in the fridge, and they are still perfectly good at three weeks.

Eggs should be stored at room temperature but most of us keep them in the fridge and the makers of fridges know that, so they include an egg rack. However, I work in a residential home and our chef keeps his on top of the microwave - at room temperature.

In the refrigerator, and not on the door. You should keep eggs as close to the cooling unit inside as possible. Many people make the mistake of keeping eggs in a holder on the door, but this is NOT the place you should keep them. As we all should know, salmonella is quite prevalent in eggs. Storing them in a warm place allows a perfect medium for salmonella to grow. Granted, it can be killed during cooking, but why take the chance? You could still spread salmonella through cross-contamination!

According to the carton, you should store your eggs in the refrigerator. Your eggs will keep for quite a while at room temperature, but they last longer refrigerated. The downside of keeping them in the refrigerator is that they will pick up odours from other substances in the fridge.
