In my opinion, we eat with our eyes first...if the food looks great with colors and different textures then it's going to be a hit with whoever consumes it.
Roast chicken is a great main course. It's golden brown and if I were going to select sides dishes to go with this wonderful meat, I'd select roasted then peeled sweet potatoes that are deep orange in color that can be seasoned with butter, cinnamon, cloves and sugar brown or white.
If you decide to have rice. A pilaf is great with raisins, nuts and other dried fruits like apricots plus sauteed onions and mushrooms.
Then I'd suggest a dark green vegetable of any kind that you have available. Spinach, broccoli or green beans. You can saute almonds or other nuts to sprinkle over the green beans if you select them. A little garlic is good with the spinach or broccoli.
A dish of mixed tropical fruit would also be refreshing like mango, pineapple, oranges, bananas, all sliced so they are easy to eat. Mixed together so they can marinate until ready to serve.
Plus any kind of breads you like. Yeast rolls are always a wonderful addition.
For the gravy to use over the roast chicken. Pour off the juices and fat that were in the pan. Place in a large cup and put in the refrigerator or freezer. The FAT will come to the top so you can remove it. Then toss it out. Now mix some white flour or cornstarch with some cold water and dash of salt and pepper. Usually 2 tablespoons of flour or cornstarch is enough to add to the liquid or juice from the roast chicken. if you need more liquid just add cold water. Mix these ingredients together and then heat over medium heat and stir with a whisk quickly and cook until thickened. Taste to see if the spices are correct. Don't add SALT until the end.
A great seasoning for the roasted chicken is to wash well the chicken and then rub oil over it like olive oil then salt and pepper it and add your favorite herbs. Rosemary is a great choice for chicken. Place in hot oven and baste occasionally until done. You can tell if it's done if the leg moves easily and if a fork goes into the thickest part of the bird and no pink juices run out. It should be clear.

Down south we would have rice AND rolls! Can't ever have too much starch! If you have gravy you need mashed potatoes for sure. Another yummy accompaniment is a Waldorf Salad - it is a bit sweet and a nice foil to all the savoury flavors:
4-5 red apples, cored and chopped, rubbed with lemon juice to prevent browning
A handful of walnuts or pecans
2 stalks chopped celery
Mayonnaise (or salad cream) to moisten
Mix it all but don't put too much mayo or it will get runny. Refrigerate until ready to serve. YUM

Sounds great try mashed potatoes for your gravy. Make the gravy from the chicken drippings. Try this lemon Spaghetti for a side dish:
1 pound spaghetti
2/3 cup olive oil
2/3 cup grated Parmesan
1/2 cup fresh lemon juice (about 3 lemons)
Salt and freshly ground black pepper
1 tablespoon lemon zest
1/3 cup chopped fresh basil leaves
Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 8 minutes. Meanwhile, whisk the oil, Parmesan, and lemon juice in a large bowl to blend.
Drain the pasta, reserving 1 cup of the cooking liquid. Toss the pasta with the lemon sauce, and the reserved cooking liquid, adding 1/4 cup at a time as needed to moisten. Season with salt and pepper. Garnish with lemon zest and chopped basil.

Definately roast chicken with vegetables and gravy. That is a classic dish.
My roasts always consist of potato, pumpkin, sweet potato, corn, peas and carrots.
And a tonne of homemade gravy!

while rice and gravy are tempting - they are too high on the glycemic scale for me -
so I would prefer green beans and sweet potatoes
