Yes, you can use a splitter on a mic cable, just as you can with a speaker/headphone cable. I'm not sure about how the two signals will combine. I know that if you split an output, each feed will be half as strong, but that doesn't really apply well to an incoming signal. The inactive mic will be sending a fairly dead signal that will mix in with the active signal, but I'm not sure how much that will affect the signal that's received, if at all. Likely there will be a steady hiss combined with your voice.

There are audio switchboxes, which might be a way to go. Those would let you have two cables coming in, one cable going out, and the ability to pick which input is active at any given moment. I've got one for my computer, so I can feed audio from either the VCR or the DVD player, and it's just a small box with three paired RCA stereo ports on the back, and two counteractivating switches on the front (press one down, and the other pops up). The only downside there is that if you don't feel like getting really fancy with the wiring, you'll have to remember to switch the feed whenever you move between the cab and the sleeper.
