IF the James Walker born 1808 is your James' father, and is 'at home' THEN Mary Walton 20 may also be a Walker; it appears they just married. Have you looked into the Wal*n family? That Sumner Co Josiah is a Jr age 21, 1850 lived with his father age 62 & mother Sally -- and so did James Walker age 39. So maybe old Josiah's his stepfather? Old Josiah may be a planter.
Maybe your James was raised under a stepfather's name or who knows ... too many possibilities. I think, bottom line, your research needs to continue in Sumner County's history.
Next line of thought. When did Jane die? Did you notice the twin named Sallie? Where'd you pick up the middle name Matthew? Where is your Walker family 1880? Look at this, who are they?

MJ & Sallie curiously have a dau born 1882 AR then back to TN. MJ seems to have a new wife every census. I think his james is a different one but don't know.
It may be that the mystery is less esoteric than imagined. We're talking Civil War times, before and after. Many families with sons just are not enumerated 1860. After the war ... well some folks hung onto anonymity to one and another extent for their reasons, AND families didn't talk about that or write it down. 1890 veteran's census had only ONE Walker, Harry, in that whole Sumner County - whatever that means.

Josiah Walton is a Jr, his mama was Sarah Sally Walker b 1792 across the line in Davidson Co TN, dau of Alexander Walker b 1766, sister to Laurence William Walker b abt 1802, AND the older James in Josiah Walton Jr's house (Josiah Jr's uncle). It appears that your James Matthew is living among his cousins. I suspect you owe me virtual online chocolate.

I take it then that the parents of James Matthew Walker were born in TN?
I don't know if this is your connection, but when I saw the name Walker, I thought of all the Walker(s) of TN McMinn Co (records in Roane Co). The Walker Reservation there, as I recall, was refuge for those Native Americans who did not travel the "Trail of Tears," and who later removed to Cherokee NC.
Maybe someone will re-post that great Native American site, as well as the free site for TN marriages (which have been on the internet since the early days of AOL).

There also is a LARGE Walker family headed by Daniel C Walker in Wayne County Tennessee. Daniel C. was the father of 23 children with 2 different wives. Elizabeth Keaton and Annie Parsley. If you know what county in tennessee your Walkers are from, it would really narrow it down.
