What I want to do is add Spanish subtitles to DVDs which don't have them.

You need to re-author it.

Keep in mind that DVD subtitles are GRAPHICS based (which is why every movie seems to have a different font, and there's no standard) so you will need a program that will generate THAT.

Basically, you need to disassemble the DVD into its various streams: the video, the various audios, the various substreams like commentary and subtitles, and the menus. Then you can reassemble the VOB adding your own subtitles, but such subtitles can only be selected by the subtitle button on the remote, as there will be no menu choice for it.

If you want to muck with the menu, then that's something else entirely. :)
