The secret is to simmer the ribs before you barbeque.
This recipe is going to sound crazy, but the end result is amazing! Simmer 4 slabs of baby back ribs in:
4 qts beef stock
3/4 cup red wine vinegar
1 tbs paprika
1 tbs cayenne
1 1/2 tbs cumin
3 tbs tabasco
1 1/4 tbs garlic powder
1 tbs ginger
1 cup tomato paste
1/4 cup honey
1 tbs salt
If you don't like all the hot spices, you can adjust to your taste. Simmer about 1 hr and 45 minutes, until the meat is tender but not falling apart.
Coat ribs with your favorite bbq sauce and bake at 400 for 10 minutes, then throw 'em on the grill for a few minutes.

Never boil your ribs..you will be losing all that beautiful flavour. Brown your ribs in a skillet with a little oil and season with your favourite steak or grill seasoning. Place them on a baking sheet and roast very slowly in a 325 deg. oven. for approx. 11/2 to 2 hrs. about a 1/2 hr.before they are done, start basting with your favourite BBQ sauce....You can also do this on your barbecue with indirect heat..

I thaw my frozen ribs and season with my choices. Wrap in foil and put in a 250 degree oven for about 3 hours. Open the foil and add BBQ sauce and kick the heat up to 350. Let them cook for another half hour. I used to boil them first but doing it this way is more flavorful.

Do the bioling in beef broth thing, but add a little vinegar. The vinegar tenderizes the heck out of them! Dont worry, they wont taste like vinegar!

Start with good meat, of course, then cook 'em "low and slow"
About 300-350F indirect heat until meat falls off bone should give desired results.

You can't just put them raw on to the grill. put them in a pan with some water, then cover the pan with saran wrap and then aluminum foil. then bake in oven at 350 for 2-4 hours. Don't forget to take the membrane off. Then you can baste them and grill them.
