find calorie/fitness calculator on the net, enter your stats, take 300-400 calories off that number and that's how much you need to lose weight.
5-8servings of fruit and veggies a day
8 glasses of water a day
5-6 small meals instead of 3 big ones (breakfast is the most important - make sure to get complex carbs like whole wheat bread, oatmeal, fruit etc)
4-6 times a week cardio for 30-50min, light weight training, many reps
no junk food, no sodas, no alcohol, no white flour (cakes, cookies, white bread, pasta etc.), nothing high in sugar (ice cream)

If you want to start tracking your calories, I'd recommend sparkpeople.com. It's free, and you can look up nutritional information by searching for the food name and adding it to your list of foods for the day so you can make sure you're staying on track.
Question 2: does it matter how many veggies you eat in one day? If you aren't dipping them in something fattening like ranch, eat all you want! It will fill you up and provide great nutrition.
Question 3: how long will it take to lose at least 15 pounds? Try to lose no more than 2 pounds per week. Losing any more than this means that you are probably losing muscle and putting your body into a fasting mode, and you'll just gain it back. So shoot for at least 71/2 weeks for 15 pounds.

Please don't limit your calories that much. Go to the food pyramid website- and see what a healthy person the right weight should be eating and drop 250 calories per day- that and burning 250 calories by VIGOROUS exercise will let you lose 1 pound a week. A HEALTHY WAY - one more likely to have you keep it off. GENERALLY you can eat up to 4 cups or plain raw veggies per day.
