5 In offering himself up as a sacrificial Lamb, Jesus Christ served as God’s High Priest who was foreshadowed by Israel’s first high priest, namely, Aaron of the tribe of Levi. All the further sacrificial high priests of ancient Israel descended from this Aaron the brother of Moses. That is another reason why all mankind needs Jesus Christ, for him to serve as the antitype of Israel’s high priests in taking the blood of the sacrifices into the Most Holy of the temple on the annual Day of Atonement, Yom Kippur.
The resurrected Jesus Christ carried out this Atonement Day picture when he ascended from earth back to heaven, to appear in God’s presence and offer the merit or value of his perfect human sacrifice in atonement for the sins of all mankind. That is why the Christianized Jews were told to look no longer to the Aaronic high priests but to the antitype thereof, in these words recorded in Hebrews 3:1, 2: “Consequently, holy brothers, partakers of the heavenly calling, consider the apostle and high priest whom we confess—Jesus. He was faithful to the One that made him such, as Moses was also in all the house of that One.”

Jesus Christ is the High Priest and only Priest that we need. Christ sits on the right hand of God the Father and makes intercession for us.
Hebrews 2:17 - Wherefore in all things it behoved him to be made like unto his brethren, that he might be a merciful and faithful high priest in things pertaining to God, to make reconciliation for the sins of the people.
Hebrews 3:1 - Wherefore, holy brethren, partakers of the heavenly calling, consider the Apostle and High Priest of our profession, Christ Jesus;
Hebrews 4:15 - For we have not an high priest which cannot be touched with the feeling of our infirmities; but was in all points tempted like as we are, yet without sin.
Hebrews 5:1 - For every high priest taken from among men is ordained for men in things pertaining to God, that he may offer both gifts and sacrifices for sins:
Hebrews 5:10 - Called of God an high priest after the order of Melchisedec.
Hebrews 6:20 - Whither the forerunner is for us entered, even Jesus, made an high priest for ever after the order of Melchisedec.
Hebrews 7:26 - For such an high priest became us, who is holy, harmless, undefiled, separate from sinners, and made higher than the heavens;
Hebrews 8:3 - For every high priest is ordained to offer gifts and sacrifices: wherefore it is of necessity that this man have somewhat also to offer.
Hebrews 9:7 - But into the second went the high priest alone once every year, not without blood, which he offered for himself, and for the errors of the people:
Hebrews 9:11 - But Christ being come an high priest of good things to come, by a greater and more perfect tabernacle, not made with hands, that is to say, not of this building;
Hebrews 9:25 - Nor yet that he should offer himself often, as the high priest entereth into the holy place every year with blood of others;
Hebrews 10:21 - And having an high priest over the house of God;

It was the High Priest that went into the Holy of Holies and sprinkled blood upon the mercy seat.
Now through the sacrifice of Jesus Christ we are able to approach the Throne of God and beg forgiveness for our sins.
We are able to approach the Throne of God and praise Him.
Our High Priest sits at the right hand of the father.

A priest is somebody who intercedes between God and the people, usually by offering sacrifices. Jesus acted in the place of the high priest who made the annual atoning sacrifice on behalf of Israel, only instead of entering the holy of holies in the Temple where the shekinah of God was, Jesus entered the actual presence of God and offered himself as a sacrifice on behalf of his people. If you'll read the rest of the passage you cited in Hebrews, it explains all of this.

When GOD instituted Levical priesthood through Moses the priest would go into Holy place and Most Holy place with the blood to pour out on the mercy seat for the sins of himself and the people of Isreal once in the year, but Christ went to the most Holy place not with blood of bull and goats but with His own blood. because the high priest was the mediator between God and man and took the blood into the holiest place that would attone for the sin of man. no other priest could do this.
That is why peter said we have "one" mediator between God and man and that is the man christ jesus. No saints, no hail marys, no bishop of rome can mediate but only Jesus Christ himself who has the blood. Worthy is the lamb that was slain!

Jewish high priest was the only person allowed to enter the "most holy place" and that only annually on the Day of Atonement and offer the sacrifice which "rolled forward" the peoples' sin which was ULTIMATELY forgiven when Jesus took the ONLY TRUE SACRIFICE into HEAVEN ITSELF to pay the price for ALL SIN.
The high priest was the only person allowed to approach God to obtain forgiveness under the former law. Jesus, by offering himself as the sacrifice and taking that perfect sacrifice to heaven itself approached the father "once for all" to deal with the sin debt of all who accept that gift according to God's terms:
Matthew 7:21 “NOT EVERYONE who says to me, ‘Lord, Lord,’ will enter the kingdom of heaven. ONLY THOSE WHO DO WHAT MY FATHER IN HEAVEN WANTS WILL ENTER.
22 “Many will say to me on that day, ‘Lord! Lord! Didn’t we prophesy in your name? Didn’t we drive out demons in your name? Didn’t we do many miracles in your name?’ 23 Then I will tell them clearly, ‘I never knew you. Get away from me, you who do evil!’

because only the high priest could present the sacrifice for sin. since He was presenting Himself as the sin offering He was then the high priest.

Because he is our intermediary between heaven and earth, and the priest who made the last great sacrifice, giving us His body in the Eucharistic meal.
