Galas are very good, but you should give the Fiji and Pink Lady varieties a try. They are similar to the Gala, but with more flavor. I think that right now the Pink Lady is my favorite.

Gala or Fuji are usually the ones I pick, although in a taste test last year I was surprised that I liked the Golden Delicious best. I have had a lot of luck lately with organic apples; they seem a bit sweeter.

Gala is what i usually get because they are overwhelmed and cheaper in our markets but my favorite are granny smith green. They have a nice sweetness to them

I have found that Granny Smith apples are great for eating, and even better for cooking. They do not get smushy, when you cook them. They hold the crunchyness.
