i am trying to find out how to make that type of chicken that is served at a "family style" dinner. it's very tender and tasty. i thought it was broasted but i was wrong. i know it's baked, but how do i get it so tender? does it need to be covered? anyone know what i'm talking about?

family-style chicken is a regional dish. iy is only found in southeastern new england. every place has their own secret. my favorite is wrights farm in burriville, ri. the closest i've been able to make was using the following method.
season assorted chicken pieces (skin on) with salt, pepper, garlic powder, and onion powder. brown in a medium heat skillet until nicely browned. add 1 can of chicken stock to a crockpot large enough to hold all the chicken. crumble up several balls of alumium foil and place in bottom of crockpot. place browned chicken on top. cook on low heat 6-8 hours depending on the size of chicken peices.
