The door chime shouldn't ring as long as the door is closed. If the door is closed and you still hear the chime, there may be a problem with the switch in the door latch mechanism. This is a common issue in newer Fords. Spray some WD-40 into the latch mechanism on the door and open/close it a few times.

If the dome light turns off when the door is closed, than it's not a defective switch. Remeber to allow for the dome light delay when checking this, if there is one. Worst case scenario-you could wire a relay and a switch. This would allow you to listen to the radio even without the keys. But it would NOT require your radio to be on at all times and kill your battery. With the switch on, the radio would be on. With the switch off, regular power functions would be controlled through the ignition like normal. Email for details if interested. Hope this helps.

You can unplug the chime but you won't hear it for anything else like if you leave your headlights on or the emergency brake on.
