Easy Peanut Butter Easter Eggs:

2 hours 2 hours prep
22 palm size eggs

2 lbs powdered sugar
1 lb butter
2 1/4 cups peanut butter
2 bags chocolate chips (can use white chocolate, milk chocolate,semi-sweet chocolate chips,whatever you like)

1. In large bowl mix all ingredients except chocolate together.
2. Mix with hands until very creamy.
3. Form mixture into egg shapes (Can make as big or small as desired).
4. Place eggs on waxed paper on cookie sheets.
5. Chill eggs in frig for a couple hours or freezer for about 45 minutes until eggs are firm and chilled.
6. Melt Chocolate in double boiler, Spread chocolate over bottom of egg with knife then place it back on wax paper then cover the top.
7. Place back in frig to set chocolate.

1/2 cup peanut butter
3 Tbsp butter, softened
1 cup sifted powdered sugar
8 ounces chocolate flavored candy coating Chocolate chips will work also

In a mixing bowl, stir together peanut butter and butter. Gradually add the
powdered sugar stirring until combined. Shape into eggs and place on waxed
paper. Let stand until dry (small balls takes about 20 minutes. Melt candy
coating. Cool slightly. Dip the eggs into the chocolate, let excess drip off.
Place on waxed paper until coating is firm. Store tightly covered in the
refrigerator. Makes about 30 candies Jan

When I am using a chocolate coating for dipping candy, I always add a small
amount of paraffin and melt it along with the chocolate, it gives the coating a
shine.
