please give me quick, relatively easy ideas for something to cook on the grill today.

Tomato Juice Can Cornish Game Hens

Okay this is maybe not the easiest recipe, but it is delicious!

There are many "beer can chicken" recipes out there to choose from (http://homecooking.about.com/od/chickenrecipes/r/blpoul63.htm). Instead of using a chicken, get 3/4 cornins game hens, and use the tiny tomato juice cans as the holders.

You will not be disappointed making this!

For quick and easy meals on the grill we sometimes like to do a "hunting and gathering" trip to the grocery store. Our first stop is the meat department to see what's on special (or to find things like filet mignon that is marked down because it must be sold/grilled today - a great way to eat well on a budget).

From there we build the rest of our menu, like oven fries, salad, wine, dessert, etc.

For grilling times we use the cookout calculator at charcoalbob.com. Enter the items to be grilled and it will calculate grilling times and what time you will eat, and give you instructions for how to grill, steaks, burgers, chicken breasts, pork chops and the like. It's great for doing a steak for one person and a pork chop for someone else, etc.

We've had some of our most fun and quick cookouts using this approach (and taken advantage of some great savings on meat, too).

GRILLED VEGETABLES :
4 zuchini
2 eggplants
4 yellow zuchinis
olive oil
thyme, salt & pepper

In an aluminium foil, put all the vegetables that you would have sliced or diced,
the salt, pepper, thyme and olive oil,
close the foil but leav a little opening, and cook on the barbecue.
Very simple and very tasty. In fact you can do the same proces with any vegetables.
Portobella or wild mushrooms are great like this.

SKEWERS :
Diced sirloins steaks
Diced chicken liver
Diced green or/and bell peppers
Sliced onions (thick)
Cherry tomatoes

On skewers, slide a piece of vegetable, one of meat, one of liver, etc. Salt and pepper

MUSTARD SARDINS (or Macquerels) :
Cleaned sardins
Onions
French mustard (Maille is better (Walmart), but Grey Poupon will do)
Salt & pepper

Stuff the fish with sliced onions and spread them with the mustard. Salt & pepper.

Grilled Lime Chicken:

5 min
6 servings

1/4 cup fresh parsley, Chopped
1/2 teaspoon grated lime zest
1 cup dry white wine or chablis
1/2 teaspoon pepper, Freshly ground
2 tablespoons lime juice
6 chicken breast halves (6 (4 oz each) skinned, boned chicken breast halves)

1. Combine all ingredients except chicken in a shallow baking dish.
2. Add chicken, turning to coat.
3. Cover and marinate in refrigerator for 1 day.
4. Remove chicken from marinade, reserving marinade.
5. Coat grill rack with Pam, place rack on grill over med-hot coals.
6. Place chicken on rack, and cook 5 minutes on each side or until done, basting with reserved marinade.

GRILLED MEXICAN SHRIMP WITH PRICKLY PEAR CACTUS FRUIT VINAIGRETTE


30 each U-15 shrimp (peeled and
deveined)
2 tbsp. chili garlic paste, available
in oriental markets
1 bunch cilantro, chopped
2 each limes, juice of
1 tbsp. peanut oil
Salt and black pepper, to taste
6 oz. arugula
1 oz. hearts of palm, sliced
1/2 tbsp. balsamic vinegar
1 tbsp. olive oil
1 c. prickly pear cactus fruit
vinaigrette, recipe to follow

Marinate shrimp overnight in the chili garlic paste, cilantro, lime juice, peanut oil, salt and black pepper. Grill shrimp until cooked all of the way through, about three minutes on each side. While grilling the shrimp: toss the arugula and hearts of palm with the balsamic vinegar, olive oil, salt and pepper. --PRESENTATION--

Place arugula and hearts of palm salad in the middle of the plate. Arrange shrimp around it. Spoon the vinaigrette around the shrimp. Windows on the Green The Phoenician
