Wool is sheep's hair that has been sheared from the sheep, "carded" (or combed in one direction to make the hairs all line up), and then twisted or "spun" to make it into a continuous strand of fibres.

Quoting http://www.ymccoll.com/sheep_camp.html :

"Wool is a natural protein fiber composed of keratin-type protein that grows from the follicles of the sheep's skin. The proteins contain five elements: carbon, hydrogen, oxygen, nitrogen and sulfur. These five elements are combined into 19 amino acids linked together in ladder-like polypeptide chains."
