Basic muffins with variations
2 cups (300g) self-raising flour
1 cup (150g) plain flour
1 teaspoon bicarbonate of soda
1 cup (200g) firmly packed brown sugar
2 eggs
1½ cups (375ml) milk
¾cup (180ml) vegetable oil
Preheat oven to moderately hot (200-210ºC / 400-425ºF / Gas Mk 5
Grease 16 holes (⅓ cup/80ml) of two muffin pans.
Sift dry ingredients into a large bowl; stir in combined eggs, milk and oil. Add ingredients for your chosen variation, following methods given. Bake in moderately hot oven for about 20 minutes.
Topping: (for all variations)
¼ cup (50g) firmly packed brown sugar
¼ cup (35g) plain flour
40g butter
Combine sugar and flour in small bowl; rub in butter.
Apple Cinnamon:
2 teaspoons
ground cinnamon
1½ cups (210g) finely chopped apple
Sift cinnamon with dry ingredients; stir in 1 cup of the apple. [follow basic recipe] Sprinkle muffins with remaining apple and Topping.
Blueberry:
200g fresh of frozen blueberries
Spoon half of the basic muffin mixture into the prepared pans; sprinkle with half of the blueberries, spoon over remaining mixture. Sprinkle with remaining blueberries and Topping.
Banana Walnut:
1 cup mashed overripe banana
1 cup (120g) finely chopped walnuts
Stir banana and half the of the walnuts into basic mixture. Sprinkle muffins with remaining walnuts and Topping.

The important thing to remember when making muffins is to not over stir the mixture.
Basic Muffins - makes 10-11
9 oz (250g) plain flour
3 level teaspoon baking powder
1/2 level teaspoon salt
3 oz (140g) granulated sugar
1 egg
8 fl oz (240ml) milk
3 fl oz (90ml) corn/vegetable oil (not olive) or 3 oz (85g) butter/margarine, melted.
1. Prepare muffin tins with muffin cases. Preheat oven to 375F/190C/Gas 5
2. In a large bowl, sift together, flour, baking powder and salt. Stir in the sugar. Make a well in th centre and set aside.
3. In a separate bowl, beat the egg lightly, then stir in the milk and oil (or melted butter/margarine).
4. Pour all of the liquid ingredients into the dry and stir with a fork until just combined, scrapping down the sides and bottom as you stir. This mixing should take no more than 20 seconds. The batter will be lumpy but no dry flour should be visible.
5. Fill the muffin cases to almost to the top and bake for about 20-25 minutes. Muffins are done when the tops are lightly brown and spring back when touched.
Variations.
Chocolate Chip Muffins
Add 3 oz (85g) plain choclate chips to the dry mixture.
Fruit and Nut
Add a handful of chopped nuts(mixed or your favourite) and dried fruit(mixed or your favourite) to the dry ingredients
Lemon Muffins
Add 1 teaspoon finely grated lemon rind to the wet ingredients. Glaze muffins immediatley after baking with 3 oz (85g) icing sugar,mixed with 3-4 teaspoon fresh lemon juice and a 1/4 teaspoon grated lemon rind.
Wholemeal Muffins
Subsitute half the palin flour for wholemeal.

Apple muffin
3 1/2 c. flour
1 T. cinnamon
3 c. finely chopped apples
1 c. vegetable oil
2 c. sugar (half brown, half white)
3 eggs
1 t. salt
2 c. chopped nuts
2 t. soda
2 t. vanilla
Preheat oven to 350. Grease muffin tins. Thoroughly combine apples and sugar, then add the rest of the dry ingredients. Mix well. Add oil, egg, nuts and vanilla. Then mix in flour. The batter will be very thick and gooey. Fill muffin tins 2/3 full. Bake about 30 minutes. Can be frozen.

4 ounces cream cheese, cubed
1 tablespoon sugar
1/2 teaspoon instant coffee granules
1/2 teaspoon vanilla extract
1/4 cup miniature semisweet chocolate chips
Muffins:
2 cups all-purpose flour
3/4 cup sugar
2 1/2 teaspoons baking powder
1 teaspoon cinnamon, ground
1/2 teaspoon salt
1 cup milk
2 tablespoons instant coffee granules
1/2 cup butter or margarine, melted
1 egg, beaten
1 teaspoon vanilla extract
3/4 cup miniature semisweet chocolate chips
1. In a food processor or blender, combine the spread ingredients, cover and process until well blended.
2. Cover and refrigerate until serving.
3. In a bowl, combine flour, sugar, baking powder, cinnamon and salt. In another bowl, stir milk and coffee granules until coffee is dissolved.
4. Add butter, egg and vanilla; mix well.
5. Stir into dry ingredients just until moistened.
6. Fold in chocolate chips.
7. Fill greased or paper-lined muffin cups two-thirds full.
8. Ba ke at 375 F for 17-20 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks.
9. Serve with espresso spread.

im rubbish at baking any kind of cakes or buns, but i buy the bbc good food magazine and when i made the muffins they gave recipes for they turned out really good. i was amazed lol! heres the link youll get loads of nice recipes here

Try Quakers muffin mixes. There is enough powder to make 24 muffins, you just add eggs, oil and water and bake for 20 mins. Use PAM oil spray for the muffin tray. Double chocolate is the best!

EASY BANANA MUFFINS:

OLD FASHIONED BRAN MUFFINS:
1 cup all-bran or bran buds
3/4 cup milk
1 egg
1/4 cup soft shortening
1 cup flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/4 cup sugar
Soak bran (all bran or buds) in milk and set aside
Mix together milk and egg
Add shortening and bran and mix well
Add flour,baking powder,salt and sugar
Stir only till combined.do not over stir.
Bake at 400 degrees for apprx. 20 minutes.
Makes 1 dozen.
