What is starchy vegetable? I'm starting on the atkins diet and I am not supposed to eat that. I don't speak english, but I do know what 'starchy' means. I just don't know which vegeteable belongs to starchy or non-starchy category. Thanks

Starchy vegetables are vegetables that are high in starches.

For example:

Potatoes
Yams
Grean Peas
Corn
Lima Beans

Non starchy vegetables are vegetables such as:

asparagus, broccoli, green beans, mushrooms, cabbage, cauliflower, eggplant, and celery
