Pancakes
1 ½ cups flour
3 tsp baking powder
½ tsp salt
3 tbsp sugar
1 egg
3 tbsp melted butter (or canola oil)
¼ tsp vanilla
1 ¼ cups milk
• Put the frying pan on the stove and turn to medium heat now if you mix fast, or
half way through if you're a bit slower.
• Mix and sift dry ingredients (flour, baking powder, salt, sugar).
• In a separate bowl, beat egg, add milk, butter, and vanilla.
• Make a well in the centre of the dry ingredients and gently add the wet
ingredients to the centre of the dry ingredients. Add fruit if desired (mashed
bananas, blueberries, strawberries, apples, whatever you’ve got)
• Using only a bare minimum of mixes (15 or 20 stirs with a wooden spoon),
combine the ingredients. It will look like there are a patches of unmixed stuff,
but that's okay. If it looks really dry, add a bit more milk.
• Fry these babies on your non-stick frying pan.

MIX ALL THE INGREDIENTS IN THE MIXER TILL IT IS A SMOOTH BATTER. TO TEST THE THICKNESS OF THE BATTER WHEN DRIPING FROM THE SPOON IT SHOULD FLOW IN A STEADY STREAM, IF IT IS TOO THICK ADD 1/2 OF MILK AND TEST.
** THIS SHOULD MAKE ABOUT 24, SIZE ABOUT 5" IN DIA.
** USE A 1/4CUP MEASURE TO SCOOP AND FRY ENJOY

* 1 cup Cottage Cheese (sieved)

* 1/3 cup All-Purpose Flour (sifted)
* 2 tbsp. Butter or Margarine
* ½ cup Honey
* ¼ cup Orange Juice Concentrate (frozen)
1. Place water in bowl. Add nonfat dry milk and beat until mixture stands in soft peaks.
2. Add remaining ingredients except egg whites. Beat egg whites until soft peaks form. Fold into first mixture.
3. Pour batter, 2 Tbsp at a time, onto hot, greased griddle. Bake until golden brown. Turn and bake on other side.
1. Melt butter in small saucepan. Add honey and orange juice concentrate. Heat until warm.

I mix every thing in my 4 cup measuring cup so I can pour from the spout directly onto the griddle -
1 cup flour
1 TBSP baking powder
1 TBSP sugar
Stir together with a fork, then add
2 TBSP vegetable oil
1 egg
Use the fork again, stabbing the yoke of the egg first then mixing everything together - it will be real clumpy
Add milk, estimating about 1/2 cup, and stir until combined, then add more milk to make a thin batter, about another 1/2 cup. Now is the time to heat your frypan or griddle over medium high heat. This little wait time for the batter allows the gluten to activate, making a nicer pancake. Even if you are using a non-stick pan, put a little butter in. Don't let the butter burn. Now pour some batter onto your cooking surface, letting it spread out to a 6 inch circle. If it doesn't spread easily, thin your batter in the measuring cup by stirring in a bit more milk, so the next pancake will do better. I always call my first pancake the "sacrificial one" because I usually have to adjust the heat so that it doesn't burn, but hot enough so it cooks, and it doesn't turn out pretty. You will see bubbles forming on the top of the cooking pancake. When the bubbles start breaking open and look dry where they broke open, it's time to flip the pancake. I don't get fancy, just turn it with a spatula. It doesnt take very long to cook the second side, just until nicely browned. If the pancake breaks when you flip it, then it was a bit too early to turn and let the next one cook a bit longer. Even the non-pretty ones are good eating. If you are going to add blueberries, sprinkle them on top of the batter after you pour the pancake, that way your batter won't turn purple and each pancake will have an equal amount of berries. You can also use frozen blueberries; don't thaw first, just sprinkle on frozen. They will cook while the batter does. Wild Maine blueberries are best of course, and enjoy your pancakes with Real Maple Syrup - it doesn't get any better.

BANANA OATMEAL PANCAKES
3/4 c. quick-cooking oats
3/4 c. whole wheat flour
1/4 tsp. salt (optional)
1 tsp. baking powder
1/2 tsp. baking soda
1 med. banana, mashed
1 lg. egg
3/4 c. buttermilk or regular milk
2 tbsp. salad oil
Combine dry ingredients. Combine banana and egg, then add milk and oil. Add to dry ingredients. Cook on griddle. Makes about 10 pancakes.

OVEN PANCAKES
6 eggs, separated
3/4 c. honey
1 c. Bisquick
1/2 c. milk
1 tsp. vanilla
2 tbsp. lemon juice
3 c. finely chopped apples
1/4 c. butter
1 tsp. ground cinnamon
Preheat oven at 375 degrees. Beat egg whites in large bowl until foamy. Beat in 1/2 cup honey, 1 tablespoon at a time. Continue heating until stiff and glossy. Beat egg yolks in small bowl until light and lemon colored. Beat in Bisquick, milk and butter. Sprinkle lemon juice over apples. Fold egg yolk mixture and apples into egg whites. Heat margarine in rectangular pan, 13 x 9 x 2 inches, in oven until melted. Pour batter into pan, mix 1/4 cup honey and cinnamon. Sprinkle over top. Bake until knife inserted in center comes out clean. About 35 to 40 minutes.

sift:
one cup flour

beat and add:
one egg (optional)
add:
1 cup milk (scant)
stir gradually to make smooth
add:
1 teaspoon melted butter or oil
cook in a hot frying pan, flip pancakes when they bubble, to brown the other side.
