Your basic quiche aperture is 3 parts yolk to 7 parts cream. whisk those together, and set aside. and then you've got it. just brunoise your bacon, onion, and cheese, put in your quiche shell, and then add the aperture. bake, and enjoy

So far that sounds great! The basic of quiche is a mixture of milk and eggs whipped together. Pout that over any combination of ingredients, like your onion, bacon and cheese. Or maybe a vegetarian version like spinach, onion, sun dried tomato and feta cheese. Anything that you enjoy in an omelet would be great in a quiche.

1 1/2 c. Bisquick baking mix
1/4 c. margarine or butter, softened
2 tbsp. boiling water
6 slices bacon, crisply fried and
crumbled*
1/2 c. half & half
1 egg
2 tbsp. thinly sliced green onion
1/4 tsp. salt
1/4 tsp. cayenne pepper
1/2 c. shredded Swiss cheese
*May be substituted with spinach. Heat oven to 375 degrees. Generously grease 24 small muffin cups, 1 3/4 x 1 inch. Mix baking mix and margarine. Add boiling water; stir vigorously until soft dough forms. Press rounded teaspoonful of dough on bottom and side of each muffin cup. Divide bacon evenly among muffin cups. Beat half & half and egg; stir in onion, salt and cayenne pepper. Spoon about 1 1/2 teaspoons into each muffin cup; sprinkle cheese over tops. Bake until edges are golden brown and centers are set, about 20 minutes. Refrigerate any remaining appetizers. Makes 24.

Mini ? I take it you mean finger food size or party pie size ?
anyway I've had success using a patty tray, you know the ones that make 12 in one tray. o.k., firstly take your pastry sheet ( shortcrust) and using a cutter to cut rounds to fit the patty tray, roll these out slightly, and put into the tray, put into preheated 180 deg C oven for about 5 mins. remove from oven and allow to cool in the tray. step 2. cut up your bacon ( rindless ) into very small bits, cut an onion into small bits, put 2 tblspn of butter into a pot and when melted add the above, stir continuosly ( do not burn ), remove from heat and add 2 tblspns flour and stir in, add 1 cup of milk ( or half half cream/milk ) return to heat and stir until smooth and just starting to bubble, remove from heat and stir in 1/2 cup of your fav tasty cheese, add salt n pepper to taste. Leave to cool. Put amounts of the mixture ( do not overfill as mixture will rise ) into the cool pastry bases ( still in the tray ).
Return to the hot oven for about 10-15 mins ( you will have to watch to determine time as they can burn quickly ).
