Most important ones, put briefly because it's late and I'm tired: Reception of mathematical and scientific knowledge by the Western world under Suleiman the Great, given by religious Islamic scholars to religious Christian (Catholic) scholars. Preservation of Greek and Eastern texts of different theologies. Sheltering of Jewish philosophy in the High Renaissance (though it could be argued this last was due to the Ottoman Empire and not the religion of Islam per se, Islam influenced the Empire's policy to a pretty big degree).

One big negative influence on another religion that came to mind: Persecution of Hinduism under people like the Mughuls and Mahmud of Ghazi, although it was more political/temporary than theological - the Sufis got along fine with the Hindus, and Akbar and the Shahs were cool with them too. I only mention this because I think it made Hinduism more of a unified faith to resist the less tolerant rulers amongst the Muslims, and as such, in a backwards way, kept Hinduism alive despite the attempts of some of the Muslim rulers to convert the local peoples.
