Why?

If you're worried about fat content, I can't say that trans-fats in butter substitutes are any better. Butter is good.

The only technical reason to be careful is perhaps the low burn/smoke point of butter. For higher temps, you want oil, and an oil with a higher smoke point (the temp at which it starts to smoke and burn).

But other than that, cooking with butter is great.

What you SHOULD do is make a point to use UNSALTED butter. Two reasons - the quality is better, because to be more stable when unsalted requires a better butter, and also because it doesn't contribute salt to the dish, leaving you free to control it by what you add yourself.

I've never heard that and am wondering where you read that information. I do know that if you are cooking with butter--such as sauteing or browning something on top of the stove--you have to maintain a moderate heat, as at a higher heat the milk solids in the butter will begin to burn and smoke. Hope that helps.

NOOOO! That is not true, look at the French (from France), they are mostly slim and beautiful, and they eat really well(just resposibally). And their butter is even higher in fat then ours! That's why their croissants are soo much better then ours!
