how do you slice your potato before you put them in hot oil.

Normally cut them into strips length ways 3/8"x3/8"

It depends on what I wish to do in the end. One of my absolute favourite things is to slice the potatoes about 1/2 to 3/4 of an inch thick, boil them for 10 minutes, and then fry them in oil until nicely browned.

If I want french fries, I slice them at 1/4 inch by 1/4 inch, using a mandoline slicer. When doing this, you should fry your potatoes TWICE. The first time until they turn a glossy whittish color. Let them cool to room temperature, and then fry them again until they rise to the top of the oil.

Cut the potato in half lengthwise. Put the cut side down of each half, and then slice it lengthwise for the desired thickness of the fries. Then take the pieces and cut them into french-fry shaped pieces. It's a good idea to remove some starch from the fries so they crisp, so soak the fries in water for a few hours. Eventually you see the fries in this cloudy water. Lift the fries out of the starchy water. Dry it in a salad spinner. Fry in hot canola oil until golden brown. Season with anything you like while hot. Chow down. Enjoy.

You'll get good results if you use a mandoline to get consistent thickness slices (rounds or shreds) or one of those little french fry cutting machines. Use a starchy potato (like a Russet).

Blanch/partially boil them if thicker than potato chips, then dry before frying. Don't try to put too many in the fry pot at once (it cools the oil below the frying point, and they'll just get soggy).

You can slice them in thin rounds and make chips, you can cut them in the french fry shape, or you can julienne and make haystack fries. Fry with a canola oil, at about three sixty degrees, or just check by testing one. If you accidentally start a fire turn off heat, chuck alot of baking soda on it and cover. Do not throw water on a greese fire, it will spread, or just check that your extinguisher is up to date, and is goo for greese fires. Do not put vinegar into the oil, it will break down the oil and is a fire hazard, season afterwords and if you like vinegar you can add that after words.

it's easy .but take sometime first your need thin sliced of potato (1.5mm) wash them till all starch been wash away . then place on the tray dry with papper towel . then stand by the oil hate up the tempeture to 60-65 c them deep fry the potato till golder brown and crispy . season with salt ..

You can slice them lengthwise or in rounds.

Here is a tip if you put them in the microwave and nuke them for about 6 mins they will fry up much crisper and taste better

Yum! I love doing this...cut them in to wedges, leaving the skin on. Deep fry them with a little bit of vinegar mixed in the oil (I know it sounds weird, but good). Season them to taste right when they come out. They will be so good...youmalicious! My mouth is watering. I'm gonna make some of those tomorrow! thanks!

long way for french fries or round slices for American fries,you can shread them for hash browns
