To make Chinese egg fried rice!!!!!
Or heat 2 to 3 cups of water in a pot, add left over rice in it, boil till the mixture is thick, add shredded chicken, finely chopped chive, sliced ginger in the rice mixture, we call it chicken congee. Add salt to taste.
You may replace chicken by beef or pork even fish slices (if you do not mind the fishy taste, but add more ginger can cover the fishy smell).

Rice Pancakes
Ingredients
1 cup cold unsalted cooked rice
1 cup small-curd cottage cheese
4 large eggs
1/3 cup whole-wheat flour
2 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon cinnamon
5 tablespoons unsalted butter, melted
Accompaniment: maple syrup
preparation
Stir together rice, cottage cheese, eggs, flour, sugar, salt, cinnamon, and 3 tablespoons butter in a bowl. Let stand 5 minutes.
Lightly coat a 12-inch nonstick skillet with some of remaining butter and heat over moderately high heat until hot but not smoking. Working in batches of 3 or 4, pour a scant 1/4 cup batter per pancake into skillet and sauté, turning over once, until pancakes are golden brown but still slightly soft, 4 to 5 minutes per batch, adding more butter as needed.

I add leftover rice to meatloaf along with a little extra tomato sauce to keep it from being bland, or...my kids all-time favorite...add some milk, cinnamon, brown sugar and vanilla along with raisins and you have a quick rice pudding. I put it in the lunch boxes for a "no preservative/additive" dessert.

Recipe: Fluffy Rice Dessert
Ingredients: 1 pkg. (.3 oz.) sugar-free cherry gelatin
1 C. boiling water
1 20 oz. can unsweetened crushed pineapple
1 1/2 C. hot cooked rice (instant??)
1 C. light whipped topping
Directions: In a bowl, dissolve gelatin in boiling water. Drain pineapple,
reserving juice; set pineapple aside. Ad juice to gelatin; stir in rice. Chill
until mixture begins to thicken. Fold in whipped topping and pineapple. Chill for

fry it up with scrambled eggs, not to much, you don't want to flood the rice, a little bit of lets say a leftover and finely chopped pork chop,part of a green onion and a bit of celery,add soy sauce after, to taste.it's good in soup; or warm up a bowl and add a bit of butter,some sugar,and cinnamon and milk a quick snack or make some vanilla pudding and add it to it. happy eating!

Heat it and put about a cup in a bowl. Add sweetener, brown sugar or white sugar, butter and milk. Its a great breakfast. Also, your green salad can handle a good helping of rice. along with tomatoes etc.

Whenever I have left over rice or pastas from meals I tend to make some type of soup with them - soup is relativly inexpensive to make if you buy canned or boxed boullion and just a few fresh veggies & meat!

A SALAD :
choped black olives
diced bell pepper (small pieces)
diced tomatoes (small pieces)
diced cucumber (small pieces)
can of tuna
some caned corn (optional)
some laituce (optional)
Vinaigrette :
red wine vinegar
peanut or sunflower oil
dijon mustard
salt & pepper
All mixed together
Serve very cold, it's delicious
