Herbs would be a better choice than spices.
I would recommend basil, a little oregano, maybe dill or tarragon
If you insist on spices instead, go light. Perhaps some curry mix?

Marinades are great for chicken breast since the meat tends to get a little dry from cooking and the lack of fat on the breast. I make a really easy marinade with lite italian dressing and some garlic powder. I usually marinade over night or in the morning so by evening the chicken will have really absorbed the flavor. Bake and enjoy!

If the breasts are are sort of thick, you can bake them in a preheated 350F (180C) oven. Put the breast in an oven proof casserole dish, season with a little salt and pepper and brush on some apricot or peach preserves or orange marmalade. They should take about 20-30 minutes to cook. Serve with rice pilaf, you just saute chopped onions and mushroom in a little oil, then cook the rice in the same pot as you would normally. The rice will have more flavor if you use low sodium chicken broth instead of the water. If you thin chicken cutlets, it is would best to just dredge them in flour seasoned with salt, pepper and some grated parmagiana cheese, then fry them in a little olive oil. If your grandfather can't have fried food, preheat the oven to 450F (225C). Dip the cutlets in egg or milk then into cornflake crumbs or ground peanuts, walnuts or pistachios or panko bread crumbs and bake in the oven for about 10-15 minutes.

Lemon pepper is an inexpensive blend that seasons chicken very well. Other options are salt and pepper, garlic powder and paprika. If you want to invest in more spices, there are great blends in any supermarket- cajun works well with chicken or you can season with salt and pepper and for the last 10 minutes, add a good BBQ sauce to the chicken.

Two favorites, one super-easy, the other not.

1. Equal measures of honey, soy sauce, and sesami oil

2. Baked chicken korma: plain yoghurt, sliced onions, crushed green cardamon seeds, cumin seeds, a cinnamon stick, a small sliced green chili, some finely chopped almonds, crushed garlic, a tablespoon of garam marsala, and a tablespoon of ground coriander.

I like a mixture of garlic, rosemary, sage and thyme but experiment a bit to find what best pleases you. A good way is to get chicken tenders and try something different on each one.

I know it sounds a little funny - but I use turkey rub. I buy one pretty big sized bottle of turkey rub and use it for lots of poutlry and for my thanksgiviing turkey of course. The great thing about rubs is that you can always add extra spices (or add them to sauces) if you want a little different flavor!
