How about asking your guests to chip in and each couple plan a meal that they prepare, bring the ingrediants for, and serve? The rest of the crew can participate in cleanup. This way, the entire weight of figuring out what to make for a week doesn't land just on your shoulders. Here are some ideas:
1. Breakfast: muffins, scones, sweet rolls
eggs with cheese, green chilis and chives
Canadian bacon, chicken apple sausage
2. Lunch: Build your own sandwich with all the fixins:
Sliced turkey, ham, roast beef
Provolone, swiss, American cheeses
Artisan bread and/or rolls
lettuce, tomatos, sliced pickles
mayo, dijon mustard, raspberry mustard
Pasta salad
Fresh fruit
3. Dinner: Pork roast rubbed with 1 T kosher salt, 1 Tsp
fresh ground pepper, 2 T rubbed sage
Fresh asparagas with lemon butter
Sweet potato casserole
Angel Food Cake with ice cream, strawberries
and chocolate syrup.
Take some time for yourself to enjoy your week away as well!

Well when you go away, you don't want to have to make meals that will take long, or things that you will have to take back home with you. That's why I'm suggesting the following recipe: Veggie Pizza
You take 2 packages of crescent rolls and roll them all out flat onto a pan (it should make a long rectangle). You put this in the oven @ 350 for 8 minutes. While this is cooking, you combine 8oz cream cheese, 1pkg of powdered italian dressing, and 1 cup mayo. Blend it until it's smooth. Then in a seperate bowl, chop (to desired size) the following vegetables: tomato, onion, peppers, broccoli, cauliflower, black olives. You can also add any other vegetables you want. When the crust comes out of the oven, spread the dressing you made evenly, and evenly sprinkle all the veggies over top. On top of the veggies put 1-2 cups of shredded cheddar cheese (depending on preference).
This recipe is SO easy, and can be taken on the go as well. I make these veggie pizzas all the time. It's usually served refridgerated, unless you eat it right out of the oven. Hope I helped!!
