when I was growing up a friend's mother use to make us pineapple squares. They were on a rectangular cookie sheet maybe an inch deep or so and had some sort of crust with a pineapple filling on top. I would love to make them, but have not found a recipe that sounds like what I'm looking for.....

Pineapple-Coconut Squares:

3/4 cup butter
1/4 cup white sugar
1 1/2 cups flour
1/4 teaspoon salt
1 (14 ounce) can crushed pineapple
1 egg
3/4 cup brown sugar
3/4 cup shredded sweetened coconut
1/2 teaspoon vanilla
1/4 teaspoon salt

1. Preheat oven to 350 degrees.
2. Place pineapple in a strainer over a bowl.
3. Reserve juice for another use.
4. In a medium bowl beat the butter and sugar together until well blended.
5. Stir in flour and salt until combined.
6. Press into an ungreased 8 inch square baking pan.
7. Press pineapple with a spoon to remove the remaining juice.
8. Sprinkle pineapple evenly over crust.
9. In a medium bowl beat the egg with brown sugar, coconut, vanilla and salt.
10. Gently spread coconut mixture over pineapple, keeping pineapple in place as best as you can.
11. Bake for 35 minutes or until topping is golden brown.
12. Remove from oven and cool completely on a wire rack.
13. Cut into squares.

Maybe you could modify the following recipe. I have used this recipe many times (years ago) and recall that it was very good pastry crust. An easy recipe. Found the original in a local home magazine.
Or -- are you describing a dessert that is much like lemon bars? Perhaps a lemon bar recipe modified would be what you want.

Pineapple Turnovers
8 oz. cream cheese
1 1/2 cubes butter
1 2/3 c. flour
1 can chunkstyle pineapple, drained

Beat butter & cream cheese until smooth. Mix in flour, gather into a ball, refrigerate at least 2 hrs.

Heat oven to 425. Divide dough into 3 parts. Roll one part into a square 10"x10". Cut into 4 squares (5"x5" each).
Repeat.

Place approx. 2 Tab.pineapple on 1/2 of @ square. Fold over diagonally, moisten edges, press trogether, prick trops, place on greased baking sheet.

425 degrees 15 min. ('til ligfht golden brown)

12 turnovers
