I am studying the types of brain wave activity for an EMT class and I cam across an article in a magazine that stated if an individual holds their breath or does something that would increase the heart rate the brain waves would be similar to someone who is having a seizure...Do you think this is possible?

Elecroencephalograph is normal during deep breath holding.
Before taking an EEG the patient is requested to take breaths. This is only to relax the patient. .No EEG changes occur after deep breathing or breath holding in an otherwise normal individuals.

Depends on the seizure type. Different seizures have characteristic EEG readings, most of which are pretty disorganized looking, so I would doubt you can replicate that pattern by doing the things you listed.
