What makes human flesh stick to some frozen stuff and not others?

Hummm. I'm guessing it has to do with the difference in the surface, you know, like the popsicle melts, but the ice cube tray doesn't. Probably when your finger melts the ice on the outside of the tray, then the moisture refreezes it to the solid surface of the ice tray because it is still so cold. Be careful as you explore this concept. I've heard of people starving to death when they got their tongue stuck to metal surfaces in the winter.

How about temperature differentials and dissipation, the Popsicle is a mixture with a lot sugar etc.. The ice tray is in direct contact, staying cold longer

It seems the raw ice on the surface of an ice-cube tray has a tendency to kiss the skin that comes into contact with it!

depends on how wet the skin or tongue is,(moisture content,too little moisture freezes fast.)when it touches the frozen object. hence the reason they use warm water to remove your tongue from the metal object you decided to lick in the middle of a dec in chicago. not talking from personal experience.
