INGREDIENTS:
2 cups onions, thinly sliced
1 large carrot, sliced
2 medium red potatoes, peeled and cubed
1 large apple, peeled, cored and cut into large chunks
1/4 cup raisins
1 tbsp curry powder
1 1/4 pounds chicken breasts, cut into pieces
1/2 cup fat-free, low-sodium chicken broth
1/4 cup reduced fat sour cream
1tbsp cornstarch
Coat a 3-4 quart crockpot with nonstick cooking spray
. Place onions, carrots,potatoes, apple, and raisins on the bottom.
Sprinkle curry powder over the vegetables and fruit.
Add chicken breasts, then pour chicken broth over them.
Cook on low for 4-6 hours. About half an hour before the curry is done,
combine sour cream and cornstarch, and stir into curry.
Serve over whole grain rice.

Apparently your expected guests are rightly health conscious!
What I suggest is don't bother cooking anything at all! Instead,
- get lots of a variety of vegetables and fruit and spread them on the dining table.
- get some fresh fish (if available) scaled, cleaned and with bones removed and keep it on the table. Or, you may get frozen fish fillet. Avoid any meat, especially red meat!
For flavour, you can keep salt, pepper, soya sauce, chilli sauce, tomato sauce, lemon juice and fructose instead of sugar -all placed in a tray.
For drinks, white wine, fruit punch and distilled water should be fine. It seems red wine is not that healthy, especially to people with cholesterol problem. Other hard drinks should be avoided. Beer is acceptable but avoid fizzy drinks.
When the guests arrive, let them choose what they want to eat and then they can or you can get it poached, stir fried or just micro-waved as is convenient or desired!

With the weather warming up, make use of your grill. Grill marinated chicken or fish, and grill your veggies too. Baby-sized zucchini, sliced in half lengthwise and brushed with olive oil grill up nicely. Yummy too. Like others said lots of salads - pasta salads with a vinegar and oil type dressing instead of mayo are nice too. Keep a big bowl of fresh fruit for snacking.
