First of all a coffee liqueur is a coffee flavored liqueur. So what the recipe is asking for is coffee flavor. To substitute, use milk and instant coffee. You have to consider that a liqueur is thick and creamy, so you have to compensate for that, and maybe use heavy cream, or hey use flavored creamer. You can use bailey's, as it is a liqueur, but you will have the flavor of baileys

Actually, any flavored liqueur will work, in a like quantity. You could use Cointreau (orange liqueur), for example, and the cheesecake would still be good...only it would be orange-flavored, not coffee-flavored.

If the liqueur is inside the cake mixture (as opposed to a topping), you could substitute a like quantity of cooled, strong coffee for the liqueur; it wouldn't throw off the moisture in the recipe, and you'd still have the coffee flavor.

The usual switch is using 2 Tbsp of Bailey's with 1/2 tsp of instant coffee powder.

Kahlua is the coffee liquor of choice. However for a substitute, you can combine vodka, corn syrup and instant coffee, to taste, I would start with 2 parts vodka, 1 part syrup and 1` part instant coffee then adjust to taste from there.

we`ve always used instant or left over stale but new coffee left in the pot, works the same and is cheaper too. no one has complained yet, cant tell the difference.
