What would be good side dish to have with easter dinner?
We are having Ham as the main meat. Should i make cole slaw, or Fruit salad??

Key Lime Fruit Salad
It's sheer bliss - lots of fresh summer fruit topped with creamy yogurt.
Prep Time:15 min
Start to Finish:15 min
Makes:8 servings

1 container (6 ounces) Yoplait® Thick & Creamy Key lime pie yogurt
2 tablespoons orange juice
2 cups fresh pineapple chunks
1 cup strawberry halves
2 cups green grapes
1 cup blueberries
2 cups cubed cantaloupe
1/4 cup flaked or shredded coconut, toasted

1. Mix yogurt and orange juice; set aside.
2. In 2 1/2-quart clear glass bowl, layer fruit in order listed. Pour yogurt mixture over fruit. Sprinkle with coconut. Serve immediately.

sweet potato gratin!
take about 4 sweet potatoes (not yams), bake them until they're soft, then peel and slice. place into a buttered glass baking dish, laying them somewhat overlapped in parallel rows. then pour about a cup of a 2:1 mixture of heavy cream and either sour cream or creme fraiche (or to taste) over the potatoes, and cover with as much gruyere cheese as you like, some salt and pepper, and bake at about 400 until it's golden brown and bubbly on top.

super rich, but this is honestly the best side dish i've ever tasted.

Bread (usually rolls or home made biscuits)
Deviled eggs
Dessert - Usually pie or cake

Scalloped Pineapple............kind of like making a bread pudding with pineapple in it............quite a hit with my crowd, different but the frutiness goes well with the ham......and everybody knows, fruit and any pork go so well together......think of pork chops and peachs or applesauce......same concept, the sweet cloying flavor of the pineapple and the inherent saltiness of the ham......Enjoy!!



Addendum:

I can be a real ditz at times.......go and forget to leave the recipe for Pineapple with Honey and Pine Nuts......


1 cup cubed pineapple, fresh or canned
1 tablespoon butter
2 tablespoons honey
2 tablespoons pine nuts, toasted
1 teaspoon rum
2 tablespoons mascarpone cheese

Drain the pineapple cubes in a strainer. Lay the pineapple cubes on a paper towel and pat dry. Put the butter in a medium saute pan over medium heat. Make brown butter by heating the butter until melted and just starting to brown around the edges. Add the pineapple and toss to coat in the butter. Add the honey and toss to coat the pineapple with the honey. Cook until the pineapple is golden, about 5 to 7 minutes. Turn off the heat and stir in the pine nuts.

Some very easy ones :

Belgium endives.
6 endives
Butter
Salt & pepper

Boil the endives in water for 5 minutes. Drain them. In a frying pan, put the butter, the endives very well drained of water, salt and pepper. Cover them and cook on medium-low heat until cooked as you like your vegetables.

Grilled vegetables :
4 zuchini
2 eggplants
4 yellow zuchinis
olive oil
thyme, salt & pepper

In an aluminium foil, put all the vegetables that you would have sliced or diced, the salt, pepper, thyme and olive oil, close the foil but leav a little opening, and cook on the barbecue. Very simple and very tasty. In fact you can do the same proces with any vegetables. Portobella or wild mushrooms are great like this.

Greean beans and tomatoes :
Boil the beans for a few minutes.
In a frying pan, put some butter, sliced onions, whole or diced peeled tomatoes (drained of the juice). When the liquid you'll get has evaporate a little add the beans, salt and pepper and stir. Cook o medium heat until the tenderness you like.

Green beans and cream
Boil the beans in salted water
In another pot, put a big piece of butter and let it melt on low heat (at no point of the proces the sauce must boil). When melted, add a pot of double cream, salt & pepper.
Let your guests pour the sauce on the beans themselves.

Tomatoes provençales (fats & easy) :
Cut the tomatoes in half.
Put a touch of oilve oil, salt, pepper crushed garlic, shredded parsley and bread crumb (the thin kind) on top of each pieces of tomates. Put in the oven at 400° but careful that the tomatoes remain firm and don't overcooked.

And here is one of my favorites :
A bag of frozen peas (or fresh peas)
1/2 a bag of baby carrots
2-3 white potatoes
2 onions
1 pack of salted pork (diced, without the white fat)
Butter

In a pot, put the butter, the sliced onions and the diced pork.
Add the frozen peas and bay leaves. About 10 minutes after, the diced potatoes, and 5 minutes after the carots. Cook until the vegetable are cook the way you like them.

Fruit salad would combine a side dish with desert. Everybody will probably be tired of sweets by meal time!

What happened to potatoes ? Fruit salad would be good for a dessert. How about a cut up pineapple slices for a side ?
