The source I am using seems to be using them interchangably, but I am not sure

Yo estoy and Estoy mean the same = I am
I am working = Estoy trabajando.

Estoy is better. You don´t need to say "yo" as it is automatically understood that you are talking about yourself.

Me estoy (reflexive)
I am washing myself. = Me estoy lavando

Since spanish has different affixes at the end of the verb for each person we dont need the subject to know it, for eg. in the verb estoy:
yo estoy
tu estás
el está
nosotros estamos
vosotros estaís
ellos están
so saying Estoy its understood its "Yo estoy" you can use it or not, its the same.
Me estoy is reflexive and means you are doing something to yourself, for eg.,
Me estoy cansando= I´m getting tired
Me estoy duchando= I´m taking a shower
etc..

Yo estoy and Estoy are the same thing ... if you say "estoy", you don't have to specify the subject of your sentence, since the conjugation implies it....

However, me estoy means something else. Me means "me" not "I", so it cannot be used as the subject of a sentence. Me is either a reflexive pronoun -- Me lavo las manos, or a direct or indirect object pronoun. If you use "Me estoy" it needs to be something like "Me estoy lavando las manos" (I'm washing my hands") or if you change the subject of the sentence ... me están esperando ("They're waiting for me")

But Me Estoy is use to refer that you are doing something for example
Me Estoy preparando un cafe
I am Making me A Coffey

Estoy = yo estoy
Me estoy, have to be used with gerund of a refelexive verb.
e.g, me estoy bañando = I'm taking a shower. or
me estoy lavando las manos = I'm washing my hands

Of course there is a difference. You can eliminate the pronoun YO, but if you say "me estoy" that rather refers to your body.
For example: me estoy limpiando.
That means that you are cleaning YOUR OWN BODY, yourself, your clothes, etc.

no they are not interchangable to say "yo estoy" is to emphasis what are you doing, "estoy" is more commonly used and "me estoy" is totally diferent it means "i'm doing myself", something that you're doing by yourself like: "i'm taking a bath"

estoy means i am, but you can say yo estoy if you want to emphasise that it's you saying it
i think me estoy means i am myself, but im not sure....

"Estoy" is generally sufficient. You use "yo estoy" when you want to give particular emphasis to the fact that YOU are doing whatever it is.
