I've got a super one. Bear with me, 'cos it sounds a bit weird.
1 oven ready chicken

Stuffing

2 dsp. sesame oil
1/2 leek
1/2 onion
1/2 red chili
2 eggs
a pinch of ginger powder
1 tsp crushed black pepper.
About 2 kg. salt.
First of all you must have a large ovenproof casserole dish, deep enough to take a whole chicken. Sweat off chopped leek, onion and chili in sesame oil, add soya bean sprouts briefly. Beat the eggs with ground ginger and crushed pepper. Add the eggs to the vegetables and stir. Stuff the chicken with this mixture.

Cover the base of the casserole with salt, place the stuffed chicken on the salt and cover completely with salt.
Bake for 1 1/2 hours in a pre-heated oven at 200°C.

Break off the salt crust before serving.
If the chicken is not completely sealed in the salt any exposed parts will be extremely salty. That's why you need so much salt - but it's the moistest chicken I've ever tasted. Try it.

honey baked chicken:
INGREDIENTS
1 (3 pound) whole chicken, cut into pieces
1/2 cup butter, melted
1/2 cup honey
1/4 cup prepared mustard
1 teaspoon salt
1 teaspoon curry powder
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Place chicken pieces in a shallow baking pan, skin side up. Combine the melted butter or margarine, honey, mustard, salt and curry powder and pour the mixture over the chicken. Bake in the preheated oven for 1 1/4 hours (75 minutes), basting every 15 minutes with pan drippings, until the chicken is nicely browned and tender and the juices run clear.

Honey Fried Chicken

INGREDIENTS
1 (4 pound) whole chicken, cut into pieces
salt and pepper to taste
1/2 cup honey
1 tablespoon garlic powder
1 packet chicken bouillon granules
2 cups all-purpose flour
1 quart vegetable oil for frying

DIRECTIONS
Season chicken pieces with salt and pepper, then coat each seasoned chicken piece with honey.
In a shallow dish or bowl, mix together the garlic powder, chicken bouillon granules and flour. Dredge honey coated chicken pieces in flour mixture, coating completely.
Fill a large, heavy skillet with oil to a depth of one inch. Heat over medium-high heat.
Fry chicken for at least 5 minutes per side, until no longer pink and juices run clear.

A quick and easy one pot chicken dish:

In a large stock pot add a combo of chicken quarters, thighs, and drummy's with a chopped onion, diced garlic, salt, pepper, 2 tablespoons of smokey paprika (Portuguese), pinch of crushed red pepper, and a bay leave and just about cover with 1 to 2 beers. Bring to a boil and simmer for about 30 minutes covered. Stir occasionally. I usually serve it with a salad and boiled white rice. Spoon some of the juice over the rice and chicken and serve!

Easy Chicken and Pasta Parmesan:

25 min 10 min prep
3-4 servings

1 tablespoon butter or margarine
1 lb boneless skinless chicken breasts, cut into 1/ 2-inch pieces
1/4 cup chicken broth or low sodium chicken broth (14-1/ 2 oz can)
1/2 cup spaghetti sauce (14 oz jar)
1/2 teaspoon dried basil
1/2 teaspoon oregano leaves
3 cups rotini pasta (8oz) or penne rigate, uncooked (8oz)
3/4 cup parmesan cheese, grated

1. In 10 inch skillet over medium-high heat, melt butter; add chicken.
2. Cook, stirring occasionally, until no longer pink, about 3 minutes.
3. Add chicken broth, spaghetti sauce and seasonings; heat to boiling.
4. Add uncooked pasta, stirring to coat with liquid.
5. Cover; reduce heat. Simmer 15 minutes, stirring every 2 minutes or until most liquid is absorbed.
6. Remove from heat; stir in Parmesan cheese. 5 servings (1 cup each)

Caprese Chicken
Serving Size : 4

4 boneless, skinless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup chopped sun dried tomatoes in oil, drained
4 ounces mozzarella cheese packed in water
1/4 cup chopped fresh basil leaves
2 tablespoons plus 1 teaspoon olive oil, divided
4 cups mixed salad greens
3 tablespoons red wine vinegar
4 teaspoons chopped chives
1/2 cup seasoned croutons

Spray 9x9x2 baking pan with cooking spray. Flatten each chicken breast half to 1/4-inch thickness; sprinkle with salt and pepper. Place equal amount chopped tomatoes in center of each chicken breast half. Cut mozzarella cheese into 4 equal portions and place on chicken. Top with equal amounts basil leaves. Roll chicken, folding in sides; fasten with wooden pick.

Place in prepared pan, seam side down; drizzle 1 teaspoon of the olive oil over chicken and bake in 375degree F. oven for about 30 minutes or until fork can be inserted in chicken with ease. Remove picks from chicken.

Place salad greens on serving platter. Cut each piece of chicken into 5 or 6 slices and arrange on greens. Mix remaining 2 tablespoons olive oil with vinegar and drizzle over chicken. Sprinkle with chives and garnish with croutons.

Morrocan Chicken
1) Put chicken thighs (Remove skin), 300 ml chicken stock, sliced onion , 1 tbsp olive oil, 1 tbsp honey, 1 tsp each ground coriander and cumin. pinch chilli and pinch cinnamon in a pan - bring to the boil and simmer for 25 mins

2) add chopped (sticks) courgettes and a tin of chickpeas (drained) cook for a further 10 minutes

3) add juice 1 lemon and a handful of chopped parsley.

Serve with cous cous.

BAKED PARMESAN CHICKEN

1/2 cup all purpose flour
1/2 cup parmesan cheese (grated)
2 tsp dried basil leaves
1 tsp dried oregano leaves
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic
1/4 cup butter
1/3 cup milk
6 split chicken breasts

Preheat oven to 400 degrees.
In 13x9in baking pan melt butter in oven. Meanwhile in bowl mix all ingredients exept milk and chicken.

Dip chicken breasts in milk and then coat in flour mixture. Dip chicken in butter then place skin side up in pan. Bake for 45 to 50 minutes or until chicken is fork tender and golden brown.

(Parmesan cheese forms a crunchy coating on this oven-baked chicken.)
