Green is not usually a good colour for bread. Green = Bad. Throw away. :-)

Bread usually doesn't go "off", but either dries out or gets moldy, depending upon the amount of moisture in it. Dry bread won't harm you; the moldy bread usually isn't a good idea to eat. Bread varies a lot in terms of how long it will last. If you buy a freshly-baked French bread baguette, it will last only a day or at most two before it develops a "stale" texture. If you buy Wonder Bread or the equivalent, which is pumped full of preservatives, it will last a week or more.

before bread starts to turn bad , there will be a strong pungent smells. This is because of the yeast. Yeast doesn't actually die in bread once its cooked. Enzymes in the bread reactivate the yeast when it is starting to turn bad. From that point it will start to turn grayish and then build green mold in spots.
According to Interstate Bakeries Corp's Consumer rep Jessica Johnston. ( makers of wonder bread) bread should be able to stay fresh in room temp for up to five days ( depending on what time of year it is) it will last longer if frozen . Several weeks as a matter of fact!
They do not recommend that you place it in the fridge because it will dry out there.
dryed bread doesn't mean bread is going bad it means the mosture source has been removed and it actually takes dried bread longer to grow mold because of this fact .
Dried bread is actually great for using when making french toast because the egg mixture doesnt allow the bread to fall apart like fresher bread does!

Stale bread will be hard to touch and feel dry. You should eat bread within 2 - 3 days of purchasing it - depending on the type. Most processed breads have a best by date on them. Check this.

It'll smell off prior to the green mold appearing. Bread usually only lasts about 5-7 days.
