The zest is the outer, yellow, rind of the lemon, or any citrus fruit. Usually grated using a grater, but I have a gadget called a zester. which takes off fine shreds, and is far easier to clean than a grater and less messy.

It is in the outside of the lemon which we would usually call the peel - it does contain the essential oils and has a wonderful fragrance and flavour. Take the whole lemon and just scratch it with your fingernail - smell it? that is the 'zest.'

There are several ways to actually get it off the lemon - you can use a fine grater such as a cheese grater or even a nutmeg grater - or you can carefully pare off a very thin slice of the skin making sure that you do not get any of the white fibrous stuff on it - as that will taste bitter.

It depends on what you want to use it for that makes the difference in how you take it off!

zest is the skin of the lemon. you remove it either by grating it finely or with a zester - do not use the white pith as this is bitter.
