The aging process is strictly monitored and controlled during manufacturing. Once you open the bottle, it is no longer aging, just older. Actually, the aging process was stopped when it was bottled.

By law it has to have an expiration date on it. Its only some brands that are fermented for 7 years - Once you open the bottle you should use it within 6 months at max -but you can use it in so many things it should go before then.

Wines age for years but go bad in mere days once uncorked.
The storage conditions are quite different and affect the chemical processes.
The sauce wouldn't necessarily be bad but rather changed from the original product as purchased.

It's like any aged product, like wine or cheese. It is produced in a very controlled environment. Once it leaves that environment and it reaches the consumer and it's opened and handled and cut or poured then it has a limited life.

Depends on the conditions under which it is aged. It's more than likely it's aged before bottling, therefore it may not last in the bottle.

That's a good question!!! I would like to know the answer myself. I think it is actually just ewwwwy gross that it is that old. To each there own with some people though. That's what makes the world go around.

It just means it's at it's best before that date - you can still use it after the date. I have a bottle at home that's a couple of months out of date and I still use it!
