I like the fresh cheese used in enchiladas, "Queso Fresco".

Oh, this question is just like the one I answered two minutes ago about how I like my eggs.
I love cheese, all kinds. It actually depends on when, where, with what I am going to eat it. My favourites are (and I know there are hundreds of types I haven't tasted yet):
1- Kashkaval
2- Kashar (kefalotyri)
3- Kars gruyere (from eastern Turkey)
4- Edirne white cheese (feta)
5- Gouda
6- Brie
7- Irish cheddar
8- Danish blue
9- Cummembert
10- Mozzarella
But my number one is Cyprus hellim (or halloumi in Greek). Traditionally it should be made from a mixture of sheep and goat's milk, although factories use a lot of cow's milk too. It is the only cheese (as far as I know) that can be grilled and fried too. We eat it at breakfast, with melons on summer evenings, as a dessert after our traditional Cypriot bbq (shish-kebab, sheftali kebab) grilled over charcoal.

Oh, it all depends on how you use it!

But maybe it's the midnight snack calling, but some swiss cheese and crisp, cold green apples sound really good right now.

i don't think i've ever met a cheese i really didn't like.

i love smoked gouda, really soft triple creme brie, fresh buffalo mozzarella with a sprinkle of sea salt, kraft singles in my grilled cheese, provolone and meunster in my sandwiches, chevre spread on crackers and shaved parmesan on buttered pasta. and the blend they use on Pizza Hut pizza. and cream cheese on a great bagel. and 2% cottage cheese with pineapple.

i love cheese! i like sharp cheddar cheese by itself. Round Table's pizza is really good too. stretchy.... yum.. and the cheese doesn't harden like the ones in Costco.
