PUTTANESCA SAUCE
WITH ANCHOVIES, OLIVES AND CAPERS
Spaghetti alla puttanesca

Preparation - Medium
Serves 4
2 small (14 - 16 oz) or 1 large (28 oz) can crushed tomatoes
4 cloves of garlic, halved
4 or 5 anchovy fillets, chopped
3 T olive oil
10 - 12 black olives, stoned and coarsley chopped
2 TBSP capers, soaked and drained
2 TBSP Italian parsley, chopped
1/2 to 1 small red chili, chopped
salt
1 lb spaghetti or spaghettini
SET aside some of the olives, parsley and capers as a garnish.
IN a deep pan lightly brown the garlic in hot oil. Add anchovies, crush to a paste with a fork.
ADD the tomatoes, olives, capers and the chili, cook over medium high heat for 10 minutes, stirring occasionally.
ADD parsley and cook for a couple minutes more.
COOK the pasta. Drain well.
IN a warm serving bowl put the cooked and drained pasta, add the sauce, and mix thoroughly (you can also do this in your cooking pan if it is large enough). Some like to add a sprinkling of fresh chopped parsley at this point.
Cheese is not usually served with this dish.

Thick and Spicy Spaghetti Sauce
2 large onions, chopped
2 medium green bell peppers, chopped
1 cup chopped celery
3-4 garlic cloves, minced
2 tablespoons olive oil
2 lbs ground beef
1 (4 ounce) can sliced mushrooms, undrained
3 (6 ounce) cans tomato paste
1 (16 ounce) can whole tomatoes, undrained and coarsely chopped
3 (8 ounce) cans tomato sauce
2 tablespoons worcestershire sauce
2 teaspoons chili powder
2 teaspoons dried oregano
1 teaspoon dried Italian seasoning
1 teaspoon salt
1 teaspoon ground cinnamon
2 teaspoons vinegar
1/4 teaspoon curry powder
hot sauce (about 3 drops)
2 bay leaves
1/2 cup water
1/2 cup Burgundy wine (or other dry red wine)
hot cooked spaghetti
shredded sharp cheddar cheese (optional)
grated parmesan cheese (optional)
Saute onion, green pepper, celery, and garlic in hot oil in a large pot until the vegetables are tender.
Add in ground beef; cook until meat is browned, stirring to crumble the meat; drain well and return to pot.
Stir in the next 15 ingredients; cover, lower heat and simmer for 1 hour, stirring occasionally.
Take out bay leaves; stir in Burgundy wine.
On individual plates, spoon sauce over cooked spaghetti; sprinkle each serving with cheese, if desired.

Quick Homemade Spaghetti Sauce:
30 min 15 min prep
5-6 servings
1 tablespoon olive oil
1 lb mild Italian sausage
1 sweet onion, chopped
2 (6 ounce) cans tomato paste
1 (28 ounce) can crushed tomatoes
1 garlic clove, minced
1 carrot, finely shredded
1 teaspoon parsley (fresh is preferable)
1 dash tsps kosher salt
1/8 teaspoon italian seasoning
1 dash thyme
1 teaspoon sugar
3 tablespoons red wine
1/4 cup grated parmesan cheese
4 1/2 ounces sliced mushrooms, drained (optional)
2 1/4 ounces sliced olives, drained (optional)
1. Remove sausage from casings and break up as you brown it in oil with the onion. Drain grease.
2. Add tomate paste and stir into well. Then add remaining ingredients, except parmesan.
3. Cover and bring to a gentle boil on medium heat. Stir in parmesan cheese.
4. Serve over pasta.

Italian spicy spaghetti sauce
Serves two to four people
You need:
1 large red capsicum
Punnet of cherry tomatoes
Small red chilli
6 sun-dried tomato halves in strips
1 tablespoon of capers
10 large kalamata olives
2-3 tablespoons of extra virgin olive oil
Salt
Ground pepper
12 basil leaves
Handful of pine nuts
Method:
Finely chop the chilli
Dice the kalamata olives
Slice the pepper down seams, remove seeds and place in grill with skin up. Cook under high grill until the skin blisters and is black. Allow to cool, slide off the burnt skin and cut into little chunks and put in a bowl.
Cut cherry tomatoes into quarters and add to bowl along with the chilli, sun-dried tomatoes, capers, most of the olives, the olive oil, salt and pepper.
Chop the basil leaves into fine shreds.
Stir ingredients and leave to marinate.
Heat a small frying pan with a little olive oil and heat pine nuts to a golden brown. Put nuts on a cold plate.
Add to the pasta of your choice and garnish with the remaining olives and basil leaves.

10-15 Minute Homemade Spaghetti Sauce
1-2 servings
15 min 15 min prep
2 large tomatoes (frozen and very big)
1 garlic clove
1/2 stalk celery
3 mushrooms
1/4 red pepper
1/4 onion
2 teaspoons dried parsley
1 1/2 teaspoons dried oregano
1 teaspoon dried basil
2 teaspoons sugar (optional)
salt and pepper

Note: it was easier to "render" the tomatoes when they were frozen. As they melt the water melts before the flesh so you are able to pour off the water.
Thaw tomatoes in microwave at 5 minute intervals on high pouring off water as it melts until there is barely any water remaining. (Bullet users: use vent lid to mic. and strain!).
Chop garlic, celery, onion, mushrooms, and red pepper finely.
Just cover with water and microwave on high till veggies are tender 5-8 minutes.
Drain.
Combine melted, strained tomatoes, cooked veggies, spices, sugar(to control tartness), and salt and pepper to taste.
Blend to desired consistency and heat in microwave on high for 5 minutes. Careful it will be hot! Use oven mitts.
Taste for spices and adjust accordingly.
Serve over hot cooked noodles.

I always get the SPICEY Italian sausage from the butcher. I brown that well in a little olive oil, then add the sauce. It seasons the sauce soooo well! If you are like me, and you like it SUPER Spicy, then add Cayenne pepper powder and crushed red pepper on top. An added bonus, its great for your immune system also!!

I haven't found any sauce better than the Kraft Tangy Spaghetti boxed dinner in the grocery store. It's really just dried spaghetti, a spice packet and a parmesan cheese packet. You add tomato sauce or paste. I spice my meat with onion powder, garlic powder and black pepper while browning it, then make it as directed.

chop up - Garlic, green-yellow & crimson peppers, white onions. Saute in sauce pan with in simple terms a splash of olive oil. ( Dont enable it follow the backside) After the vegetables are a easy brown glaze coloration, throw in a mix of Turkey floor pork ( Or known floor pork, in spite of you like ) some candy & incredibly spiced italian sausage (with out casing) and upload in simple terms a splash of crimson wine. ( Wine which you will easily drink. in case you wouldnt drink it why positioned it on your food good?). Salt and clean pepper to style. Stir meats with the vegetables till the beef is cooked each and each of ways by. upload your well known bottled sauce. upload a pair cans of stewed tomatoes. combination. upload a splash sugar. Simmer for 30min. appreciate! ( that's my recipe, no longer taken off the information superhighway like some human beings )

1.Homemade Spaghetti Sauce Recipe
2 pounds Italian Sausage
2 tablespoons olive oil
1 Onion (chopped)
1 Red Bell Pepper (chopped)
1 Green Bell Pepper (chopped)
3 Cloves Garlic (minced)
12 Roma tomatoes (chopped)
2 small cans Tomato Paste
3 small cans Tomato Sauce
1 bay leaf
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried oregano
1/4 teaspoon dried thyme
1/2 teaspoon dried parsley
1 teaspoon salt
1/4 teaspoon black pepper
Spaghetti Noodles
Parmesan cheese
1. In a large soup pot - brown Italian Sausage and crumble the meat into chunks. Drain grease.
2. Add olive oil, bell peppers, onion and minced garlic. Cook for 5 minutes, stirring frequently. Add chopped tomato and cook 5 more minutes, still stirring.
3. Add tomato paste and tomato sauce. Fill empty cans with water and add to pot.
4. Add spices to the spaghetti sauce. Add salt and pepper. Stir well.
5. Cook on low heat for 1 1/2 hours. Stir often to keep spaghetti sauce from sticking to bottom of pan. (add more water if sauce becomes too thick)
6. Remove bay leaf and ladle sauce over spaghetti noodles.
Top with Parmesan cheese.
Serves approx 6 people.
2.Homemade Spaghetti Sauce (Homecanning)
4 gallons tomatoes, washed, peeled, and chopped
1/2 cup canning salt
3 lbs onions, chopped
2 heads garlic, minced (not cloves)
3 bell peppers, chopped
1 cup sugar
1 hot pepper
2 tablespoons dried oregano leaves
1 1/2 tablespoons dried basil leaves
4 (12 ounce) cans tomato paste
Mix all ingredients together in large pot.
Simmer for 2 hours AFTER it starts to boil.
Stir occasionally.
Put in jars.
For pints, pressure can for 5 minutes@ 10# pressure.
For quarts, pressure 10 minutes@ 10# pressure.
Makes about 20 pints or about 10 quarts
3.INGREDIENTS

In large saucepan over medium heat, saute onion and garlic in olive oil until soft. Stir in tomatoes, tomato paste, water, Italian seasoning, basil, sugar, wine, and crushed red pepper. Reduce heat to low and simmer 3 hours, stirring occasionally. Serve
