4 hoagie rolls
2 tablespoons yellow mustard
1/4 pound baked ham, thinly sliced
1/4 pound roast pork, thinly sliced
1/4 pound provolone cheese, thinly sliced
10 thin dill pickle slices, approximately 2 whole pickles
1 tablespoon unsalted butter, room temperature
Slice the bread horizontally in half, leaving 1 edge intact. Lay the bread open and spread each side with the mustard. Divide the ingredients evenly among the slices of roll. Start with the ham followed by the pork, cheese, and dill pickles. Bring the tops and bottoms together.
Heat your panini maker or sandwich press. Butter each side of the press. Place the sandwiches inside, press down and grill until the cheese is melted and the bread is flat and browned, approximately 10 minutes. If you don't have a sandwich press, you can heat 6 fireplace bricks wrapped in foil, in a 500 degrees F oven for 1 hour and then press the sandwich between them for 10 minutes. Serve warm.

Panini Sandwiches:
4 min
4 servings
8 slices sourdough bread (or other round loaf bread)
4 slices mozzarella cheese
4 slices provolone cheese
4 slices cheddar cheese
1/2 lb deli turkey
1/2 lb deli ham
1/2 lb sandwich pepperoni
1/2 lb genoa salami
pepperoncini peppers, cut into rings
1/4 cup melted butter
1. Start heating the grill.
2. Place 1 slice of mozzarella on each of 4 slices of bread.
3. Place 1 slice of provolone on each of the other 4 slices of bread.
4. Top the mozzarella with pepperoni, salami and pepperoncini.
5. Top the provolone with turkey, ham and cheddar.
6. Place the two halves of the sandwiches together.
7. Brush the top of the first sandwich with the melted butter.
8. Place the sandwich butter side down on the grill.
9. Brush the other side with melted butter.
10. Grill till bread is toasted and the cheese has melted.
11. Continue with the other sandwiches.
12. A George Foreman grill works great with these sandwiches but even a stove top grill would work.

Tuna and Artichoke Panini
3/4 cup pitted kalamata olives
2 tablespoons olive oil
2 garlic cloves
1 teaspoon lemon zest
1/4 cup mayonnaise
2 (6 ounce) cans tuna in olive oil, drained
1 (12 ounce) jar marinated artichokes, drained and coarsely chopped
1 teaspoon fresh lemon juice
1/2 teaspoon fresh ground black pepper
1 (16 ounce) ciabatta, halved horizontally
1 tomato, diced
Puree the olives, oil, garlic, and zest in a food processor until smooth and spreadable. Blend in the mayonnaise.
Toss the tuna, artichokes, lemon juice, and pepper in a medium bowl, keeping the tuna in small chunks.
Hollow out the bottom and top halves of the bread. Spread the olive puree over both cut sides of the bread. Spoon the tuna and artichoke mixture onto the bottom half of the bread. Sprinkle the tomatoes over.Cover with the bread top.
Cut the sandwich crosswise into 6 pieces and serve.

Roast Beef Panini
1/4 cup mayonnaise
2 teaspoons sun-dried tomatoes, minced
1 teaspoon garlic, minced
1 teaspoon prepared horseradish
1 teaspoon ketchup
1 pinch cayenne pepper
1/3 cup red onions, slivered
1/3 cup pickled sweet peppers (I used a mixture of hot and sweet)
1 pinch red pepper flakes
4 slices sourdough bread, 1/2 inch thick
butter, softened
1/2 cup white cheddar cheese, shredded
4 ounces deli roast beef, thinly sliced
1. Mix mayonnaise, tomatoes, garlic, horseradish, ketchup, and cayenne in small bowl.
2. Toss onion, peppers, pepper flakes, and some juice from the peppers in another bowl. Let it stand for at least 5 minutes for flavors to blend.
3. Spread butter on one side of each slice of bread, and spread mayo mixture on the other side. Sprinkle cheese on two slices, top with roast beef, then some of the salad mixture, then the other slice of bread, butter side up.
4. Toast sandwiches in George Foreman grill or in a skillet using another heavy skillet or foil-wrapped brick as a weight. (Cook over medium heat. When first side is browned, flip over and cook the other side, weighting again.).

i agree with her ^ recipe, but i think that you should use fococcia bread instead of sourdough, because fococcia tastes better for paninis in my opinion.
