here's a recipe my daughter makes & everyone loves it. A blend of different coatings creates an extra-crispy fried chicken.

Super Crispy Pan Fried Chicken
1 qt. buttermilk
1/4 C. of coarse Kosher salt

12 to 14 pieces chicken - legs, thighs, breasts
2 C. all purpose flour
1 box Oven Fry Extra Crispy mix
1 packet Shake n Bake Spicy coating for chicken/pork
1 Tbs. coarse ground pepper
1 & 1/2 tsp. of cayenne pepper
2 Tbs. of baking powder
2 Tbs. of Emeril's Original Essence
3 lbs. vegetable shortening

Cover chicken with buttermilk. Refrigerate overnight or for at least 2 hours. Mix salt, flour, Oven Fry, Shake n Bake, pepper, cayenne, baking powder, and Emeril's Essence together in a brown paper bag or plastic sack. One at a time place chicken pieces in the bag and shake. Place coated pieces on plate or tray. Heat vegetable shortening to 375 degrees in either cast iron pans or large electric fryer. Liquid should be about 1 & 1/4 inches deep. Put chicken in pan using tongs, dark pieces first then white meat. Cook until coating is a dark golden color. Drop temperature slightly then turn over and cook until the other side looks the same, about 8 - 10 minutes a side. Remove and place on cooling rack

Captain Crunch Chicken 3/4 cup Wondra flour. 2 eggs, beaten, 1 cup of crushed cereal. Dip chicken pieces in egg, flour, egg, and then cereal. Fry in peanut oil for about 3 min on each side. My family loves this. Dip in sweet and sour sauce or honey. We like the honey.

The trick to good crispy fried chicken is HOT OIL! 375 degree farenhiet! Don't over load as you will lower the temperature too much and your results will not be crispy!
You can use your favorite chicken seasonings or purchase packets in the grocery store to coat the chicken prior to frying!

I make crispy chicken at home. I dip the chicken pieces in beaten egg, then roll it in a mixture of seasoned (salt, pepper, garlic, paprika. or any other spices that you like) flour, or you can crush up corn flakes, or use instant mashed potatoes. then I fry them in a small amount of olive oil. Turn them often to keep from burning.
